To play on the Mishima High School stage, you have to play as either Jin or Xiaoyu 50 times, which unlocks their high school uniforms. While wearing their high school uniforms, pit them both together and you'll play on said stage.
My favorite is Dr. B's stage. Epic boss-like music + the character himself is a boss/unlockable character! Pretty match for him and the stage he's placed to. Also like that announcer guy. He speak quiet deep to make it kinda epic!

The only unlockable characters to have stages of their own are Gon and Doctor B.
I'd have loved to have seen how Bosconovitch's and Gon's stage would've looked in the Arcade version.
