- We're into our second week now of lovely sunshine on the west coast of Scotland which is actually quite challenging for fish Farmers, especially for our freshwater and hatchery sites where we need the rainfall, however we thought we would get our local smokers in to show you how to fillet a fish for the barbecue.
The Steelhead trout that Kames produce is some of the best in the market now and people really do notice the difference.

Hi @johnsaunders1945, just following on from this, this particular fish is a Steelhead trout grown in the sea, not a river rainbow trout which are smaller. It's the same species but the Steelhead has a natural inclination to migrate to the sea and there it becomes more silvery in colour and grows much bigger. They're more akin to a salmon as they're far more athletic than a river trout.
