in the very bottom right of the screen next to your health/gold/food/etc there's a little arrow pointing upwards. Clicking that will show you more info including your party speed, which if you hover the mouse you will see a breakdown of whats slowing you down. having more animals in your inventory than people in your party causes a significant herding penalty

The reason you had trouble while mounted is that you didn't adapt your swing timing. You swung like you were going 20mph slower than you were leading to massive misses. Needto swing way earlier at those speeds

For heaven's sake use the terrain. Cliffs, water, boulders, trees, running circles while shooting a bow is the most brain dead tactic there is.
