See this is how filler should be done… There is still some plot moving forward (noting her horn has grown, and the worry about what it means) all while everyone is doing something mundane like a office Party. It pumps the brakes and slows the story down just a little, and shows time has passed.

Aizawa is surprisingly amazing with kids, he deals with a classroom filled with wild teens and takes care a young, traumatized child. He really is a good father figure and mentor to all of his students and kids
In all fairness, there’s also the fact that he’s literally the only one who can keep her power from going wild
Aizawa just needs to adopt her already. He’s pretty much raising her. Just get the paperwork outta the way.

Apparently her primary guardian is still technically her grandfather. But it's kind of hard to raise kids when you're still in a coma. Although that does bring up the question of what's going to happen if and when Eri is able to rewind him back to normal.
On the one hand, her grandfather seemed to care about her enough to try to protect her from Overhaul's experiments. But on the other hand, it's not like Eri knows him that well, she's already formed a strong connection to everyone at UA, and Pops may or may not have to do time for some yakuza stuff.
