When I was living in Ireland, this was my go-to for the fat ingredient in mince for mince pies. I'd also use it blending with some salted butter as the fat for making the pie dough for the mince pies.
Beef is not the same now, when i was a younster when we had a beef jount the next day the leftover beef that had cooled over night would have loads of jelly on the meat it was fantastic. You dont see it now people dont even know what your talking about and the driping in the roasting tray on bread was to die for not like that white stuff you were eating. Dont get me rong dripping and lard are super foods end of storey much better that your extra virgine. Mouth feel is completely different as well.

Can't go back in time to when I was a kid can I? You'd need to have parents that are willing to give you it as well
We always save the fat from every joint but I wish I was able to afford more beef.
