Well, I hate to burst your bubble, but if you fly economy, you won’t really get Thai food. I speak from experience. I wasted like half of my main course for both dinner and breakfast on a flight from Bangkok to Sydney. It was that bad.
Overall, a comprehensive review and a pleasant flight. I have always appreciated the thoughtfulness of the Thai flight attendants. I attribute that to their culture that seems to emphasize kindness in the way they treat others. I am looking forward to flying on their A-350. That is my aircraft of choice nowadays. I flew same route Business class plane was 2 years old IFE was excellent, as was the service from the cabin crew.The seat was OK had a car style seat belt, confused a few passengers including myself.

Just as a rule of thumb, avoid any B777 because that's going to be an old product. The new B777-9 is 6 years late and many airlines were expecting to replace the current one years ago.
My experience: When I booked my return business class tickets from Germany to Thailand, I chose both flights in new planes, but just a few days or weeks before the flight date Thai Airways changed both flights for older planes, aged and less comfortable. Also they didn't respect my seat number booking. No explanations or alternative proposals. This is disrespect to the customer, deception and trickery.
From my experience, Thai Air Business class in long haul flights is bad and disappointing: When I booked my return business class tickets from Germany to Thailand, I chose both flights in new planes, but just a few days or weeks before the flight date Thai Airways changed both for OLDER PLANES, aged and less comfortable. Also they didn't respect my seats number bookings. The business class SEATING were BAD for anybody taller than 170 cm, the rows were too close excepting two rows. The AUDIO-VIDEO SYSTEM HAD CONTINUOUS INCIDENTS, it was impossible to watch movie o listen music without suffer shutdown several times. Also some of the headphones give a horrible sound. The crew was used to this; they had to reset the system several times during the flight. AC: the business cabin temperature was too cold, frozen. I wasted my first 5 days in Thailand on bed, sick because of it. FOOD: just regular. DRINKS: wines were served 10-15 minutes later than food, too late and unacceptable for a Business class. BOARDING and Security: there was no a different queue and finger for business passengers, it was together with economy class. VERY POOR CUSTOMER SERVICE, horrible, Air China standard. They made me miss a connecting flight in Bangkok due to the long delay in the arrival of the Thai Air flight. They did not take responsibility for anything, nor did they provide any solution or compensation, and they treated me very disrespectfully, demonstrating that customer service and satisfaction is a concept unknown to Thai Air, nothing to do with European standards. My score for the long haul business class in Thai Airways: FAIR to BAD After that deceiving and disappointing experience and the poor quality, I have never flown with Thai Air again. There is a good choice of much better airlines: Turkish, Qatar, Singapore, Lufthansa, Cathay,...

I always check plane type when booking long haul.. Only fly A380 And 787, especially Business Class. 777-300 is way too old now
