The difference is that the Nord is more of a backhand disc and probably often used used for tee shots. The Jarn on the other hand works really well on back hand approach shots and is slight more over stable. While the numbers are similar, the use is very different. Nord = similar to Roc3 and Jarn = Zone.
Seems like less about the stability and more the glide difference. Different shaped nose, more glide, wider diameter = more distance + plus less of a sharp angle when it hits
