@asomy89 Thanks for the kind words! Nutmeg would be a great addition. It's a strong spice, so I would use anywhere from a pinch up to 1/4 t. Walnuts will change color when they are baking because of the chemical reactions going on around them. It doesn't change the flavor and they aren't burnt. It's just what they do :)
@adepunk77 Once I've made the cupcakes and frosted them, I put them on a tray and into the freezer overnight. Then the next day I wrap each one in plastic wrap and put them into a freezer bag, back into the freezer. (They can last 3 months!) When you want to eat a cupcake, take it out of the freezer, unwrap the plastic and let it sit on the counter for 20-30 minutes. The frosting will help keep the cake moist as it defrosts. -Cindy (P.S. Love the lemon in the cream cheese frosting :) I keep looking for a better way to make Red Velvet Cupcakes because I just won't put a bottle of red dye into a cake. Beets are definitely out, so it may be a while before I make a video on that one. Sorry! -Cindy
@rubyjlove Canola oil (or vegetable oil) is very typical in this type of recipe. It makes for a much denser & moister cake. Butter would be the preference for light and fluffy cakes. You need a really dense cake to support the carrots, nuts, & pineapple. It's soooo good! -Cindy
@ToriGourmet You could definitely use some dried strawberries in these cupcakes. I would soak them in a bit of warm water for about 10 minutes, then drain the water and add then add them. Is fine powder like powdered sugar? If so, you could dut the tops of these with the powdered sugar instead of using frosting, if you'd like. They would be more like a muffin then! -Cindy

Just have a question: if I decide to freeze my cupcakes, what would be an option to defrost them? Im not sure if I have to bake them, since they will have the cream cheese frosting! nice recipe, but i think i would cream the eggs and sugar not add the oil to it or you end up with mayonaise. after mixing the egg mixture with dry, then add the oil. OH and can i ask was the degree in farenheit, or celsius? but over all it was a good. when i had done it my way :) cheers girls and boys
