Looks delicious! Next time I would freeze the mango and thaw it back out to break down the cell walls and a little more and some pectic enzyme to help break down the fruit a little better
sounds nice only i wouldnt make it, id have already eaten the mango flesh and the skin. mangoes dont last around me. however i believe mango skin may impart a nice flavor to the wine.
