I felt something similar when I first finished Sekiro. But you get used to it. “Low fantasy”. Or in Rise of Ronin, they really went with a realistic world. Hence no “zombie enemies” or the Oni’s of their previous games.
Why is team ninja doing this thing where they always give you npc helpers. It ruined wo long because the game is slightly balanced around it but still makes the whole game a joke.
No the hell it's not. You've clearly never played Ghost of Tsushima. Just because we're given a choice to either spare or kill our Blade Twin doesn't mean they copied anything. For starters, the circumstances are totally different and the scenes that play out after the choice are also totally different.

Parrying sound is nice and the combat seems smooth, there just isn’t enough boss variety. They all look very similar, with very basic arenas
There are nearly 50 move set（stance）in this game, and bosses all have different movesets.
