That looks good, but that's NOT poutine (eastern Canadian here).. I get it that it's like a poutine, but the crispy fries, are really important.. And the MOST important step that's missed is the cheese curds.. You NEED the squeak of the cheese in a good poutine, or it's just fries with gravy and cheese. St Alberts cheese curds typically used, though you'd probably have a hard time sourcing that.

I see various people trying to guess what type of beef this is. You're all wrong. Originally in The Netherlands this piece was named differently, literally translating to jew tenderloin, referencing the shape and that it originates from the front half of the animal (and thus fits the orthodox diet). Due to current overwrought time this name is no longer allowed and thus chances are that this post will disappear as well. The cut is a rarely used muscle from the top of the shoulder blade and really is just as tender as the actual tenderloin they sell for four times the amount of this piece.

In the Netherlands it's not called Diamond steak Because it looks like a Diamond. The original name is jodenhaas (something like the jew's tender) and this has everything to do with their food traditions, not Because the dutch wanted to be disrespectfull to them.
Because jews can originally only eat from the front quarter of beef and this kinda is the only real lean steak in the front quarter.
But Because is may sound offensive we started calling them Diamond steaks Because jews were, and still are, awesome in selling en cleaning up Diamonds.
