Generally understood to be very entitled and incapable of admitting defeat.

Well, actually, I think she treated her staff too well. Chefs who take no responsibility for what they offer their customers. You saw that the kitchen is dirty. None of the employees came up with the idea of cleaning. This is their workplace, it's their responsibility. You cannot put the blame on one person.

The literal reason why Gordon is as harsh as he is is because he loves food. He loves restaurants, and he loves the industry as a whole. When he goes to these places and gets mad, he's getting mad because he knows that other people have come to these places before and have had a bad time. He just wants to help, and the owners just don't know how to take someone being brutally honest about the business they're running.
