It’s true that many people out there do not know the basics of cooking, and they don’t try because it can be a bit intimidating at times. You know I love to cook, I just don’t like to bake. Now this recipe sounds tasty! I just made a big batch of beef vegetable soup last week. I always put sweet peppers and cabbage in my soup, so the peppers you added should be very good. I think I threw everything I had on hand in my soup. I used fresh, frozen and canned. I froze some of it too. I don't know how the potatoes will be after frozen, but they are in there. I had always cooked my vegetable soup with beef stew meat or a chuck roast. My husband wasn't crazy about ground beef. But to my surprise he loves chicken & vegetable soup. I cook everything for 20-25 minutes in my digital pressure cooker. So good and oh so easy.

When I cook veggies with our meals, after they've sat in the fridge a couple and nobody is eating anymore, I bag em in quart or pint freezer bags and freeze just for soups or chili. Makes things so easy when I need a quick go to meal and of course it's always good to be able to keep leftovers from going to waste :)

I love homemade soups. Sunday I took a container of yellow split pea and smoked ham soup out of the freezer and we had homebaked buns with it. I cooked up a 10 lb smoked pork shoulder ham for dinner about 10 days ago and made the broth from the bone and added yellow split peas, extra water to the broth, onions, grated carrot and diced celery and made about a gallon of soup that I froze the leftovers into 3 meals for 2. I tell ya homemade soup, what ever the flavor straightens ya out.

Have you ever made Italian escarole soup? It's one of my all time favorite soups especially now with the weather getting colder. Although some people use ground turkey or chicken to make the little meatballs in the soup, my mother uses a package of meat loaf mix-ground beef, pork, and veal- to make the meatballs and it is so delicious! When my children were still living at home, I loved those early morning hours when the house was so quiet. It was just me and my coffee. That was such a peaceful time for me. I still like getting up early even though it's quiet here now most of the time.
I don't know what to buy....mild or hot Tennessee Pride....I like things on the mild side but if the hot isn't really that hot after simmering with the rest of the soup...I'd get the hot sausage. Don't know what to use. Will the mild season the soup too?

lol it does get hot here... Im not sure if I told you or not... But Mom & I are looking for a place to move to..I'm not sure which State yet... To make a long story short... My Husband had this house special built for me.. And Ive been here almost 20 yrs. now.. But its really hard for me to go on w/my life when there's so many memories here.. I like using frozen veggies. They’re affordable and food is so expensive now. The frozen are just as tasty in soup. Cornbread goes with everything!

I use frozen vegetables for soup. Also it's great you Re telling new cooks how to cook.
We make ours the same way but we boil a roast and then cook vegetables in the broth.

I heard that bear meat is very salty..is that true?
It really has a taste of it's own. Moose will also work. It's a lighter taste than beef.

I love making hearty soups, and I’m so glad the weather is getting cooler and we’re getting into official soup season (though I make it year round). lol it does get hot here... Im not sure if I told you or not... But Mom & I are looking for a place to move to..I'm not sure which State yet... To make a long story short... My Husband had this house special built for me.. And Ive been here almost 20 yrs. now.. But its really hard for me to go on w/my life when there's so many memories here.. So were looking for another state to move to... I want to go where its a small town.. I don't like big cities... So.. the hunt is on...lol

when I cook with sausage or hamburger in soup I use a metal potato masher and it cuts up the meat and you get finer mince.
I just enjoy standing and stirring. I think it's what I'm use to. I've always done it this way but a potato masher sounds like a good idea. TFW God Bless Linda
