Another cheese that might surprise you in a lot of recipes is Havarti. Back in the late 70s or early 80s I was craving a quesadilla but was out of Monterey jack cheese, which was one of favorites (and I'll swear that it tasted much better back then) but I did have some Havarti in the fridge so I used that, and it was so good that now I use it in a lot of my Mexican dishes, combined with other cheeses or alone. I love it in chiles rellenos when I use Anaheims or Poblanos, it really holds up with either flavor profile. These enchiladas look so good, creamy and just a little gooey! 😋💚 I love Muenster too!! Heck, I just love cheese, my favorite food group!!!🧀

Girl..... I made these for my two sons and my dad and they DEVOURED them . I did the thing with the tortillas exactly how you said, and they didn't get soggy. I was able to make 14 enchiladas plus 2 with just cheese using a pound of munster cheese and 2 large chicken breasts. this recipe blew my mind how good it came out . Thank you and mad respect!

I found this video in trying to find an enchilada recipe that showed me how to work with tortillas without having them become gummy; this recipe worked! I couldn't find the Mexican crema or cheese she recommended; instead, I used the substitutes she suggested. The sauce didn't set up as well as hers did in the video, but it still tastes and smells great. I'm excited to try this once I do find the ingredients she listed. The only drawback: she didn't really say how long to boil the tomatillas or jalapeno; I did each about 10+ minutes. One tomatilla cracked, but it doesn't seem to have affected the taste. This recipe is a godsend and the enchiladas taste great.

I’m gonna try to make this…..but as a vegetarian-I’m gonna have to do some substitutions …….maybe I can mash some potatoes with garlic instead of the chicken - and vegetable stock instead of the chicken broth. This recipe is different from the one my father taught me -but it looks delicious.
