Great video Eric, looks absolutelly delicious. Just a question, sometimes you use beneficial mold on the outside of the casing. This one didn't, it is because your chamber is innoculated or because it isn't needeed here?

Yep same. I could do it but it’s a lot of work to have a large, clean and ordered space.

Eric, could you make a mole, and then spread it thin in a dehydrator to turn it into a powder, and then simply use that powder in the salami?

I'm thinking about making my first homemade Salami, but where I live I can only get my hands on something like Insta Cure #1 and not #2. Can I just make Salamis with your recipes that ask for #2 with #1 or does that not work?

Question, but a little background first. I am one of those strange people who is allergic to cumin. I usually replace the cumin with either Hatch chili powder (adds a subtle smokiness)or Mexican oregano. I am thinking I might use a blend of these in this recipe. Any suggestions?
Nice video! Just one question, I've seen you're using more animal casings recently to make salami. So what's the difference between using animal casings and synthetic casings you previously used? Will it lead to a different flavour in the salami?
No. Typically, I'll use animal casing for specific diameters. Hog casing is great because it dries quick and it's edible.

You don’t have to use chocolate. If there is a allergy issue, the Ancho peppers give a good Umami flavor on their own. I grow mine and grind my own powder. Gives sausage a great flavor.
