We use all the trimming for sausages. It’s the leftover meat after we butcher out all the roasts, steaks, stew meat.

How much fat to moose are you using? Also is it beef fat or pork fat?
We do both and usually use 30-20 % fat depending on what we feel like.
How many lbs of meat for the ingredients.
Hmmmmm…. I can’t really remember to be honest. Sry I think it was around 25lbs total with meat and fat
