Hello,
I have clients that use gluten free dough with hydration as low as 40%? Do you believe the machine can divide such hard dough?
Also I have a client that uses a very hydrated dough, up to 90%, with a lot of rest, 3 to 4 hours. Do you believe it will divide from 80g to 610g just the same?
