I sure appreciate your cooking videos (All of your videos are great!). My mother chased me out of the kitchen as a child. She did not teach me to cook, so when I married young, I had to teach myself, find recipes at the library and from my grandmother, and ask my husband's mother what she was doing. Twenty years later, I can certainly cook, but believe it or not, I still have never cut up a whole chicken. So thank you! haha

Not much trapping done in our part of Kentucky anymore. Helped my dad as a kid with his fur sales, he had tree dogs & we harvested raccoon, possum, and bobcat back in the day. Good times stumbling along in the dark after the old man! I liked your 2 deer hunting videos. I have hunted deer for 30 years. I find it hard to find anyone who relates to it as FOOD not antlers! Thus I don't get into the 'tall tale" telling I see others do, for me it is the total experience. Scouting, putting up the blind, anticipation, hunting, the kill, recovery, butchering & preserving, putting it on the table and sharing with others. A gift from God to be appreciated, savored, and not wasted.

When shit hits the fan and the grid gets knocked down, folks will wish they had a method of preserving food. When the power goes out for a week most folks are hurting. Not much preparedness going on in our country anymore.
Your local branch of the USDA has a lot of info on canning. They will also check the calibration on your gauge & weight on your pressure canner. Don't forget to correct your pressure for altitude, although back east that is usually not a factor. Great video I can smell the chicken now!!

As usual, a great and educational video. Not sure why I missed watching this one sooner. I see I'm going to have to invest in a canner. I use a regular pressure cooker a lot as it saves on time and money for energy used. Also ordering a set of cast iron cookware. I had a set when I lived in Arizona but that got left behind with my guns when I moved back home to Nova Scotia. Now that I finally have a gun card I'll be going hunting again on my 27+ acres.

This canning video is one of the best that I have ever watched. You give clear concise directions, and visuals. Thank you. When I’m boiling the chicken I add onion, celery and parsley, it flavors the broth and chicken and is ready to thicken for gravy or is ready to be used as soup. Quick and easy.
my 94 year old aunt taught me how to do this a few years back, we raw can it but we can it with the bone intact it makes the best broth for soup i have ever had. really enjoy your vids and have learned alot thank you
Good stuff there. My Bride and I, as well as my folks when I grew up, would can up chicken. We grew them ourselves, then did the butchering too. Great way to save money AND store food long-term.

Love your videos!!! Someone asked about shelf life of meat, we keep it 2-3 years with no problems. Actually red meats seem to age/develop better flavor over the first 6 months. Just my opinion. Have canned venison, beef,pork, turkey, bear, & chicken. Thanks so much for taking us all along on your cabin trips. From the number of views you are getting.... evidently you and I are not the only ones who like to get off by ourselves & tell the world to take a flying leap! Take care.
Howdy Beth, The canned chicken taste so dang good that it doesn't stay on the shelf very long. I don't know what it is about canned meat but it sure does taste awesome. I've had 4 year canned old venison and it was great, LOL on the world "taking a flying leap" ha ha.. I use the same expression and even in the same context. Well said :-))

Good info, we always cut up whole chickens. (Noticed the bandaid towards the end of the video...hope you are ok...) I remember the canned whole chickens from the "gubment", this will be so much better. Thanks for sharing!!
Great video as usual. As to your cutting ability, I am (or was) a professional meatcutter for 26 years and you did just fine. My only suggestion is to trade that Chef's knife for a 6 inch boning knife and you'll find the job goes quicker, easier, and you'll leave less meat on the back and more on the thighs.
Talk about going back into the archives! I just wanted to say that since you originally posted this video I’ve wanted to try this at home, well, yesterday I finally did! Turned out great! I found a few top notch chickens for $1 a pound and just went for it, following your instructions per this video. Ended up getting 2 quarts of canned chicken and 2 quarts of awesome stock! I didn’t want to do too many for my first time, in case I screwed up, but I will most definitely do this again! It’s 3 years too late, but THANK YOU for sharing this extremely valuable information!

Having a pantry full of canned meat is a very good feeling. No worries about the power going out and losing it. Canned meat is just plain awesome. These birds are .95 per pound so it's a big savings cutting them up myself. As always, good to hear from you.
That was such a helpful video, Jim, thank you. I have always been afraid to use a pressure cooker. I remember Gramma using one fifty years ago. I know they have changed a lot these since. Great vid JC! I have been raising my own meat birds for a few years now. I think I will give this a try soon. I lost a lot of meat, chicken, deer, and moose due to freezer failure. canning would have saved me a lot. Keep the vids coming, the info is very valuable.

Great information JC, I'm a terrible butcher and never can get anything cut up without running into bone and not finding the joint. Good tip on bending the leg or wing just a little till you find the joint. Also a good point you make on the different uses between a pressure caner and just a hot bath type caner. Another great video. We buy several turkeys at a good price around Thanksgiving when the price is down. Then we also butcher turkeys for a friend and get one or two for in exchange for our labors. We can these turkeys just like you do the chickens. Good eating and quick easy meals.
Morning Boss, I really enjoyed your video this morning. All my sister's have canned their veggies and I always thought it was funny they never did meat and what the process would be. Not many people down here do canning so I never learned. That is #1 on my list on vacation this year and I'm excited to do it with my daughter and sisters. I finally got a chance to pick up some chickens that were on sale, and broke them down. I figure that the breast meat alone is worth what I paid for the chickens, and the rest is free food. I only did 2 chickens tonight, but I am going back tomorrow to get more. Pretty sweet deal to put free food in your freezer with no more than a few minutes of work per bird. If it wasn't for this video, I would have never thought of doing this, thank you again Boss :)

I like having ground pork on hand because it makes the BEST meatballs and it's what I use for my Gorton spread. Ground pork is 3.99 to 4.49 per pound. I just bought a bunch of pork butts for 1.29 per pound and then some other roast for .99lb and ground them myself. Big fricken savings right there. The more money I save = the less I have to earn. Happy new year.

My first canned meat experience was at my Father In-Laws deer camp just outside Harrisville on Diamond Match Property. They had canned meat buried in 5 gallon buckets, buried in the dirt floor of their post WWII log camp they built. They replaced the camp in the 60's but kept the structure of the first camp. I think the meat was from the mid 1970's and we were there in the early 80's and it was still good. In fact probably more tender than stuff that was butchered and frozen. Another great video. Thanks,

I do buy chicken thighs in the store but I get more meat for my money when I process them myself. Cutting them up, freezing the choice portions, canning the rest as well as the broth and having the carcasses for soup, really stretches the dollar. The further the money goes, the less I have to make. Thanks for commenting.

I canned 40 jars of moose and 20 jars of sea ducks last fall and it is very convenient now I'm back to work. It makes for a very quick and a very tasty meal. I use the raw pack method and you are right, it is dryer.
You can use canned chicken to make good chicken salad or chicken gravy, or good Mexican recipes, just about any thing you would use fresh cooked chicken for.
Boss I learned to can at a young age.Im the youngest of three and spent alot of time in the kitchen with my mom.I feel canning is becoming a lost method in preserving food.I canned morel mushrooms last year for the first time,(hoping I find a bunch more this year!).Thank`s for another great video!
I have found I prefer a cross between the two methods. I put the raw chicken pieces into the jars. (Including the skin, if it's bought meat--skinless if I butchered it, because I don't pluck chicken when I butcher them.) But I don't pack the jars completely tight with the meat. I leave about two or three inches, and add water to cover the meat. Season as desired, and process under pressure as you demonstrated. This yields a fantastic broth, besides very tender, juicy meat. Wonderful for all kinds of dishes! And the chicken fat should never be thrown away. My mother (who turns 90 this year) taught me to save chicken fat for use in making homemade bread. Chicken fat is not unhealthy, especially if it is home-grown. It is highly monounsaturated. However, I do not like to can the breast meat. White meat cooks very quickly, and if overcooked, can become tough. (Especially if you're dealing with old hens!) I have found that if I slice them thin, and freeze them in small bags, they pan-fry or grill very quickly, for a fast meal. On sandwiches, these just can't be beat!

Having a pantry full of canned meat is a very good feeling. No worries about the power going out and losing it. Canned meat is just plain awesome. These birds are .95 per pound so it's a big savings cutting them up myself. As always, good to hear from you.

Great vid JC! I have been raising my own meat birds for a few years now. I think I will give this a try soon. I lost a lot of meat, chicken, deer, and moose due to freezer failure. canning would have saved me a lot. Keep the vids coming, the info is very valuable.

Great information JC, I'm a terrible butcher and never can get anything cut up without running into bone and not finding the joint. Good tip on bending the leg or wing just a little till you find the joint. Also a good point you make on the different uses between a pressure caner and just a hot bath type caner. Love your back to basics videos, as usual, job well done my friend. - Chris

Another great video. We buy several turkeys at a good price around Thanksgiving when the price is down. Then we also butcher turkeys for a friend and get one or two for in exchange for our labors. We can these turkeys just like you do the chickens. Good eating and quick easy meals.
Morning Boss, I really enjoyed your video this morning. All my sister's have canned their veggies and I always thought it was funny they never did meat and what the process would be. Not many people down here do canning so I never learned. That is #1 on my list on vacation this year and I'm excited to do it with my daughter and sisters. I am not giving up . I will soon have that heaven in the woods away from the hustle and bustle of the new generation that knows absolutely nothing about living.

I finally got a chance to pick up some chickens that were on sale, and broke them down. I figure that the breast meat alone is worth what I paid for the chickens, and the rest is free food. I only did 2 chickens tonight, but I am going back tomorrow to get more. Pretty sweet deal to put free food in your freezer with no more than a few minutes of work per bird. If it wasn't for this video, I would have never thought of doing this, thank you again Boss :)

I like having ground pork on hand because it makes the BEST meatballs and it's what I use for my Gorton spread. Ground pork is 3.99 to 4.49 per pound. I just bought a bunch of pork butts for 1.29 per pound and then some other roast for .99lb and ground them myself. Big fricken savings right there. The more money I save = the less I have to earn. My first canned meat experience was at my Father In-Laws deer camp just outside Harrisville on Diamond Match Property. They had canned meat buried in 5 gallon buckets, buried in the dirt floor of their post WWII log camp they built. They replaced the camp in the 60's but kept the structure of the first camp. I think the meat was from the mid 1970's and we were there in the early 80's and it was still good. In fact probably more tender than stuff that was butchered and frozen. Another great video. Thanks,

I do buy chicken thighs in the store but I get more meat for my money when I process them myself. Cutting them up, freezing the choice portions, canning the rest as well as the broth and having the carcasses for soup, really stretches the dollar. The further the money goes, the less I have to make.

I canned 40 jars of moose and 20 jars of sea ducks last fall and it is very convenient now I'm back to work. It makes for a very quick and a very tasty meal. I use the raw pack method and you are right, it is dryer.

You can use canned chicken to make good chicken salad or chicken gravy, or good Mexican recipes, just about any thing you would use fresh cooked chicken for.

Boss I learned to can at a young age.Im the youngest of three and spent alot of time in the kitchen with my mom.I feel canning is becoming a lost method in preserving food.I canned morel mushrooms last year for the first time,(hoping I find a bunch more this year!).Thank`s for another great video!

I have found I prefer a cross between the two methods.
I put the raw chicken pieces into the jars. (Including the skin, if it's bought meat--skinless if I butchered it, because I don't pluck chicken when I butcher them.) But I don't pack the jars completely tight with the meat. I leave about two or three inches, and add water to cover the meat. Season as desired, and process under pressure as you demonstrated. This yields a fantastic broth, besides very tender, juicy meat. Wonderful for all kinds of dishes!
And the chicken fat should never be thrown away. My mother (who turns 90 this year) taught me to save chicken fat for use in making homemade bread. Chicken fat is not unhealthy, especially if it is home-grown. It is highly monounsaturated.
However, I do not like to can the breast meat. White meat cooks very quickly, and if overcooked, can become tough. (Especially if you're dealing with old hens!) I have found that if I slice them thin, and freeze them in small bags, they pan-fry or grill very quickly, for a fast meal. On sandwiches, these just can't be beat!
