I ate at Morton’s Steakhouse in Cincinnati one Christmas. It was good, but kind of forgettable. The most memorable aspect of the meal was just how rare my NY Strip was. I like rare steaks. I ordered it rare, but no other restaurant I’ve ever been to has ever served me a steak so rare. The inside was literally purple. The seasoning was pretty basic. I almost never put steak sauce on prime steaks, but this was one of the few exceptions.

Marbling, you mean? Also, the color of the fat, age of the cow, quality at slaughter, diet and exercise it received are all factors. But yes, the marbling is one of the primary factors in grading.
@@John-xb2nl My understanding is that yellow fat results from pasture-fed cattle. Which is supposedly healthier and leaner than grain fed. But beef from grain-fed cattle just tastes better, for the general public. The famous wagyu cattle are raised with a carefully controlled diet of grains, for example.
@@capmidnite I don't think it tastes better, but that is personal choice. It is more tender, or mushy, perhaps. Tenderess is also genetic, some grass fed cattle which are leaner are more tender. Check out what Nolan Ryan is doing with his beef brand. Quite lean, select yield grade 1, and shear tested for tenderness.
