How to Make Suman sa Lihiya (Pinoy Sticky Rice Cake)

  • Suman sa Lihiya or Filipino Sticky Rice Cake
    Traditionally, we make suman every Halloween or in the eve of All Saints' Day (November 1). But it is always available all year round in kakanin stalls, restaurants and palengkes (market). Perfect served hot or cold with coffee, during breakfast, meryenda or even dinner.
    Ingredients:
    1 kg Glutinous Rice (Malagkit na Bigas - Sungsong)
    Water for rinsing, soaking and cooking
    1 tbsp Lye
    1/4 tsp salt
    Banana Leaves
    Plastic twine (straw)
    1 1/2 cup Coconut milk (Gata)
    1 cup Brown Sugar
    You can make 10 suman in this recipe. Just double the amount of ingredients if you want to make more suman.

    I am grateful to YT really. Later generations of homecooks are better in the kitchen than the old generations in churning out delicacies like this one. The old folks are not willing to share recipes and hostile about it, not allowing variations and creativity. Cooking is an art so a cook should be allowed self expression.       Ang tawag din po dito sa laguna ay Sumang Yapos. Akap-akap or yapos dahil po mgkayapos po cla kpag binabalot at tinalian. Thanks for watching! 😊

    I prefer the fresh grated coconut with sugar as dip. My Mom makes the coconut milk caramel also.

      I used to make coconut caramel in bulk storing them in recycled bottles , kept them in the fridge. Used it for suman, sandwich spread as coconut jam LOL instead of fruit jam or peanut butter.

      Hi! Hndi ko pa po natatry thru pressure cooker.. pero i gues pwede po to lessen the cooking time.. or you can search po other videos na nagluto po ng suman using p.cooker pra sure po.. thank you for watching!

    Wala bang maaaring pan substitute sa dahon ng saging? Wala kasing puwedeng pagkunan ng dahon ng saging.

      Hello po. Kung wala pong dahon ng saging, pwede po kyo gumamit ng parchment baking paper or aluminum foil. Pero suggest ko lng po na balutin muna ng cling wrap or any food grade na plastic ung rice mixture bago balutan po ng baking paper or alum foil. :)
      Pero wala na po ung aroma na makukuha sa banana leaves.

      Lye water or lihiya, will make the rice gooey and more sticky and also gives the yellow-green color effect. Thank you for watching! 😊
