  • PRESSURE COOKER SUMAN SA LIHIYA and LATIK
    Prep time: 45 minutes
    Cooking time: 20 minutes
    Yields: 16 halves of suman
    4 cups glutinous rice soaked in cold water for 1 hour.
    1 tbsp lye water - NOTE: in my video i have said 2 tbsp. please change it to 1 tbsp.
    Banana leaves for wrapping
    Kitchen twine
    For LATIK
    1 can coconut milk
    1 cup brown sugar
    a pinch of salt
    Strain rice and add lye water. Combine well.
    Clean banana leaves with clean cloth or paper towel to remove the white stuff.
    Place leaves over fire or in a microwave (1 minute on high) to make it soft and pliable.
    Wrap about ¼ cup of rice into 2 layers of banana leaves ( please see my cooking video)
    Stack well in a pressure cooker. Fill pressure cooker with enough water.
    Put the lid according to pressure cooker instructions.
    Cook on high heat.
    Once you hear the whistle, time it for another 15 to 20 minutes.
    Cool down the pressure cooker and run cold water on top before removing the lid.
    Strain.
    Unwrap and serve with coconut caramel or latik.
    LATIK
    Combine coconut milk, salt and brown sugar in a small pot.
    Use medium heat as you stir occasionally.
    Cook for 18 minutes until thick.
    Cool down slightly and serve with the suman.

    Hello po chef good day po chef sarappo ng suman sa lihiya gustong gusto po yan ng nanay ko na 86 yrs old meryenda at almusal Nia alam nyo naman po ang mga matatanda basta malagkit yanang gusto nila.try ko po yan kc dto po sa pilipinas pag binili po per piraso Ang mahal kaya luto n lng po ako base po sa luto nyo po lahat pa makakain at pwede po pang paninda.     I have a few takeaways from your video from the way I have known how to make it - using round banana leaves, microwaving the leaves to make it plyable, using a pressure cooker to cook the suman . . Very nice . . thanks for sharing

    I also cook suman sa lihiya and for the latik, it is also a good option to put a pinch of anise seeds as it gives that aroma which completes it. Cheers!

      Hello Cynthia.. if you scroll down my channel you will see another video that didn't use pressure cooker. I think adding enough water, it will take you about 1 to 1 1/2 hours to cook it. :_) Enjoy.. God bless. and welcome to my channel.

      Lye water gives the suman a flavor and aroma and it's natural like just water,maybe the dahon itself give the color to the suman..
      And it's only my own opinion and experience using lye water cuz I do used it with kutsinta..

      well pakuluan mo nalang .. wag steamer. alam mo naman ang suman. parang nag sasaing lang tayo. d ba? iba lang ang bigas na gamit.. malagkit na bigas ito. so parang saing lang.. oK? hope it answers your question. SAlamat God bless

      Hindi natin masasabing suman sa lihiya Pag wala noon. Pero you can Google how to make it. Baking soda lang and some other stuff

    I just followed your recipe. Bakit mapait ang iniluto kong suman? My mom said because of lye water. your recipe 2 tbsp. dalawang tablespoon naman ang nilagay ko. is it safe to eat kahit mapait? I guess 2 tbsp of lye water ay too much?

      Thats what im thinking also konti lang po dapat and sa video ni chef o think bka nagkamali lang sya it should be 2 tsp.lang kc ung ibang recipe nito usually 1 tsp lang

    Chef sorry for asking this hindi po ba kayo naglamali measurement nyo ng lye water 2 TBSP po ba talaga kasi konti lang po nun matapang na. Then ung actual mo na nilagay it seems na 2 TEASPOON lang po

      rodel enar ok lang and valid ang question mo. This is my answer.. Hindi kase lahat ng lye water pareho. Maybe I was using a very light lye water or maybe Medyo old na ang lye water ko.... at any rate- please use your own judgement. If you think 1 tbsp is good enough sa suman mo.. please go ahead and use it. Valid ang question mo.. it’s all good! Happy cooking! Enjoy

      Pag malambot na.. pag pressure cooker mga 30minutes k na. Pag boiling using a pot mga 2 hours.

      Use a regular pot and boil it until maluto. OK lang ang kaldero.. pero less time nga lang pag pressure cooker..

      Kaldero puwede nman. Kaya lng 3 to 4 hours maluto .Depende sa dami iluto mo ako 3 kilo malagkat niluto ko sa uling 4 hours bago maluto ang sarap makunat.
