Chilaquiles, Médano Beach & Kickass Margaritas in Cabo

Cabo San Lucas was our port of entry on our Mexcellent adventure and we decided to start things off in style with a stay at Médano Hotel and Spa, just a hoppity hop down the street from beautiful Médano Beach. Super place with exceptional service and breakfast included featuring a selection of spot-on Mexican classics. Our very first chilaquiles in Mexico were perfection! Also, we got a little wedding anniversary surprise upon arrival. Best. Carrot Cake. Ever. No joke. ¡Muchísimas gracias de nuevo al maravilloso equipo!
On our first day, and after those killer chilaquiles, we bid hasta luego to our super server Isaac and headed on down to the mind-bendingly stunning El Médano Beach for a dip. Post dip, we had some pre-lunch margaritas, followed by amazing seafood ceviche and fried calamari, followed by post-lunch margaritas, all courtesy of The Sand Bar. After a post-lunch, pre-more-margaritas sandy stroll, the beach clubs started amping up and we decided to merge with the Médano and join in with the scene.
