In Australia only butter chicken, Rogan Josh, tikka masala etc that are popular. You know the usual curry but he cooks me authentic Indian home made meals! Now I can't wait for COVID to be over so I can fly over there and taste all the amazing food! Although I'm gonna have to go on a strict diet first!

I only recently came to know Indian food last year and I've become obsessed. A new restaurant opened near me and I was told to try biryani. I had no idea what it was! What an incredible first impression. The flavors holy heck. A spice *explosion* that's so ridiculously fragrant, it made my mouth water just smelling it. It's so good. So good in fact that I constantly go there and get the same thing every time- chicken biryani, paneer naan, lentil soup, and raita. RAITA THOUGH??? Delicious.
I have been welcomed into a wonderful culture and have engrossed myself in it. I don't like to break away from biryani but I also *really* like saag aloo, chicken tikka masala, and butter chicken. And I've recently started to favor basmati rice over the usual jasmine haha

Biryani is the most popular dish here in India and is available in any state you go. Having said that ,each state is unique and the local cuisine changes every 200kms or so , which is why one finds so much variety. Peace ✌️!

Tbh the street food is so heavy, inexpensive & delicious here, its a real challenge to tie your tongue and not gain weight. Not only that every city has few vendors that have their signature version of common dishes, the taste that can't be replicated anywhere else. Finding such stalls across cities is what i yearn for whenever i visit any city.

Indian vegetarian food is not limited to salads which is why people say it’s boring food but Indian vegetarian food are full of aroma and flavor which makes it easier to transition into vegetarian. North Indian food : Punjab/ Rajasthan/Gujarat have distinct food, go to Delhi for an amalgamation of 'North Indian' taste if you lack time.
East Indian food : Bengal and nearby areas have distinct food . Go to just Bengal if you lack time.
North Eastern food : Sikkim, Mizoram, Meghalaya, Nagaland, Tripura have distinct food, with overlapping taste palates in some areas.
South Indian food : Tamil nadu, Karnataka, Kerala have distinct food, with some common tastes along.
For meats/ Biryanis and Mughlai cuisine visit Hyderabad, although some Mughlai can be found in Delhi too.
