They're really flexible. Three of them (Lee Know, Felix, Changbin) have blackbelts in taekwondo. Felix used to be the only one who do kicks (their Boxer performance MV is lit af), but recently it was Changbin (and other two on his side) on Domino who did it.
the point of the choreo is exactly what you said, to make it look easy when it is not, the lyrics go "I just MAKE IT easy" because they are just that good !
Other great Stray Kids dance practice videos with great choreo: Hellevator (choreographed by Lee Know), My Pace, Victory Song, and a fun and quirky one is Akward Silence. I love "GRRR" also, which is a really early one.

I like how even though Stray Kids incorporates trendy/TikTok moves into their choreo, they do it in such a way where in 5 years, it won't be seen as "cringe" and it may not even be noticeable. Meaning, they incorporate it in a way that doesn't feel like pandering and feels natural and seamless. It just feels like apart of the song's choreo.
I think they evolved their style when a lot of other k-pop boy groups started executing the super synchronized style. They can deliver that, but so can everyone else. They recognized that they have some things that no one else can deliver which is injecting tons of personality into their movements, so they're leaning harder into that now, if that makes sense.
