    People who complained most of the time are those people who doesn't know anything. "Mexican and Filipino fusion". Every chef has it's own version of cooking. So respect and be proud that we have fellow Filipino who's promoting our food.

    Happy to see that you guys are doing great with the business. I live in the Philippines, specifically Bataan, which is 30min drive from Pampanga that's why I had a lot of those authentic sisig. One look and I can tell that sisig is delicious.

    Support our fellow filipinos who make a living by spreading what is part of our culture. Not wveryone shares our taste buds people they have to adjust the recipes to please not only filipinos but the other cultures as well. Hopefully they could have a food truck here as well . Id go for sisig taco man .

    We have a lot of Filipinos (some actually own restaurants) here on Saipan, Northern Mariana Islands 🇲🇵 and boy I'm tellin ya, they make 💣 ORIGINAL SISIG! 😋

    I think the chef altered the recipe slightly to cater non-Filipino clients.
    Bottomline is, they like it, and it is selling.

    There's no authentic sisig. Everyone has its own version and this one is so good! Years before the famed sisig in Angeles appears my grandfather was already making this dish which he called dinakdakan. This is in the Ilocos region.

    To all the Pinoys complaining, Sisig is a Kapampangan word meaning 'to eat something sour.' It is a type of food preparation, involving the usage of citrus/or vinegar, salt/soy sauce, and pepper.
    Nowadays, there are varieties of different sisig. There's tuna, chicken, squid, tofu, etc. Though the most popular one is pork bits.
    So shut the fuck up and don't say that this is not Sisig. The preparation is Sisig, only it's not traditional. This is like California maki, it's not traditional but it's still sushi.

      I'm half Filipina and half Mexican. I know what traditional Filipino food is. I understand the concept behind Señor Sisig, but I cannot fully accept it as Filipino food. First, off I am traditionalist and big believer in keeping it 100% authentic when it comes to. Don't get upset with ppl who aren't enthused by 'FUSION' food. It's just a different opinion. In fairness I've never tried Señor Sisig, but after watching them on Food Network I was disappointed that they strayed from the actual components of traditional pork sisig. This might raise awareness of Filipino food culture, but as a Mexipina, I'll be honest. It's a sadly a MISREPRESENTATION of real Filipino food culture. Anytime a food business decides on a fusion concept, authenticity goes out the window. I think that's what a lot of Filipinos here are trying to say. If you're gonna represent a culture through food, freakin' give 'em the real thing. I heard one of the guys mention in an interview that he was aware of the lack of exposure Filipino food gets on a worldwide scale. I'm thinking, ' A fusion concept is only gonna confuse people about Filipino food culture really is, even though you think fusing it with Mexican food will increase its marketability.' He may have been right, and he may be racking in the dollars, but people still wind up duped and confused about our culture.

      jervill1​, I'm with you all the way. In fairness, sisig is indigenous to Pampanga, and as far as I see it, they cannot rightfully dub it sisig if it isn't made with grilled pork head. They're putting all kinds of weird shyt...It may taste good, but hell no, don't misrepresent our traditional sisig. I call a foul on them for that. Now, ppl who don't know better are even more ignorant about our cuisine through misinformation and misrepresentation. I'm proud of our food; don't tamper with our tradition! Lmao!

    I like the fusion. The Filipino food culture is still there and they get to mix it with other country's food culture. This is just how Filipinos are, we get along well with other cultures because of our mixed roots - Spanish, Japanes and American! Oh! Mix it up with the Chinese, Malay and a loooot more.

    My first taste of PH was landing at 7pm and making Pasig by 9PM I was hungury after 18 hours of airline food
    We sat at a outside bar had Red horse and Sisig Loved it ..Oh Chumpardo in the morning And Taho walking Rizal park
    I cooked day 3 (Steak with Peppers and Onions and my version of Canadian BBQ sauce with Hand cut sweet potato fries ) for 8 people They told me to open a vendor spot lol

    Dear Filipinos,
    If you bothered to actually watch the video you'd know that senor sisig is filipino/latin american/mexican fusion. The chef also mentioned that originally sisig is made from pork head/cheek but they do a cleaner version (a variation) of the dish by using pork shoulder which is a popular cut of pork by the way. Their sisig variant is just good strategy (diskarte).

    So happy to see Filipino food make its mark.
    You know what will be even better? using real sisig. The texture and the umami you get from the ears and jowl is unbeatable. Using pork shoulder, that’s not real sisig.

    Sisig Fusion. Those from Ilocos Region. Sisig is somewhat similar to dinakdakan. The only difference is that instead of pig brain or mayo they use soysauce. The rest of the ingredients are the same.

    the main reason Filipino food is yet to be a big cuisine is that people changes it every time. like for example, here they claim to the dish to be a sisig, it's not, the process and ingredients are 90% different. another example is adobo. there are literally hundreds of ways to cook it. every family and every region have their own ways.

    I think the host was a bit misleading when he said that sisig is a sour pork dish. A dicsclaimer to all the non filipino people out there: its not exactly sour. This is coming from a person whos family heritage is in Pampanga.

    that's more like adobe than a sisig. see how the marinade was just the same with the adobo wings. and it's a forbidden rule to put garlic on sisig. but i bet it taste delicious.

    Sisig made with Adobo marinated pork, grilled and drenched in a spicy lemon and soy sauce mix... I mean it looks good and I bet it tastes good but the only similarities that it has with sisig is that they're both diced meat....
