Nowadays, there are varieties of different sisig. There's tuna, chicken, squid, tofu, etc. Though the most popular one is pork bits. So shut the fuck up and don't say that this is not Sisig. The preparation is Sisig, only it's not traditional. This is like California maki, it's not traditional but it's still sushi.

In fairness I've never tried Señor Sisig, but after watching them on Food Network I was disappointed that they strayed from the actual components of traditional pork sisig. This might raise awareness of Filipino food culture, but as a Mexipina, I'll be honest. It's a sadly a MISREPRESENTATION of real Filipino food culture. Anytime a food business decides on a fusion concept, authenticity goes out the window. I think that's what a lot of Filipinos here are trying to say. If you're gonna represent a culture through food, freakin' give 'em the real thing. I heard one of the guys mention in an interview that he was aware of the lack of exposure Filipino food gets on a worldwide scale. I'm thinking, ' A fusion concept is only gonna confuse people about Filipino food culture really is, even though you think fusing it with Mexican food will increase its marketability.' He may have been right, and he may be racking in the dollars, but people still wind up duped and confused about our culture.

My first taste of PH was landing at 7pm and making Pasig by 9PM I was hungury after 18 hours of airline food We sat at a outside bar had Red horse and Sisig Loved it ..Oh Chumpardo in the morning And Taho walking Rizal park I cooked day 3 (Steak with Peppers and Onions and my version of Canadian BBQ sauce with Hand cut sweet potato fries ) for 8 people They told me to open a vendor spot lol

The chef also mentioned that originally sisig is made from pork head/cheek but they do a cleaner version (a variation) of the dish by using pork shoulder which is a popular cut of pork by the way. Their sisig variant is just good strategy (diskarte).
I want to be a chef someday and have my own food truck. But i need the enough money to invest on my business and culinary arts.:) Still working on it but it will be worth the wait someday:D

the main reason Filipino food is yet to be a big cuisine is that people changes it every time. like for example, here they claim to the dish to be a sisig, it's not, the process and ingredients are 90% different. another example is adobo. there are literally hundreds of ways to cook it. every family and every region have their own ways.
I think the host was a bit misleading when he said that sisig is a sour pork dish. A dicsclaimer to all the non filipino people out there: its not exactly sour. This is coming from a person whos family heritage is in Pampanga.
that's more like adobe than a sisig. see how the marinade was just the same with the adobo wings. and it's a forbidden rule to put garlic on sisig. but i bet it taste delicious.
Sisig made with Adobo marinated pork, grilled and drenched in a spicy lemon and soy sauce mix... I mean it looks good and I bet it tastes good but the only similarities that it has with sisig is that they're both diced meat....
