I just found your channel a couple of weeks and you're one of my favorite already! Most TV is garbage so all I watch is RUclips. Your videos make me both sad and happy. I grew up a lot like y'all did here in south Georgia. We grew our own vegetables but not meat. Some of my favorite memories was shelling peas with my mama. I really hate that I did not share that with my own daughter. Your children are very blessed that you're keeping your traditions alive.
When my great grandmother can her sausage after slaughtering her pig she would turn her jars upside down so all the grease would be on top.you all are living a good life I know its hard work canning and preserving your own food and meat.💕💕💕
I discovered your channel a few months ago. I always look forward to your videos and enjoy them so much. I grew up in North Georgia and we had a lot of your Appalachian Ways. It's so good to see you and Andy teaching your kids and giving them responsibilities. My husband grew up on a 200 acre farm and it's hard work but worth the reward. The salted down hams. Also had chickens for awhile. They raised beef cattle and always had a big garden. He raised a hog that won Grand Champion at the local county fair. The grocery store he worked for bought the hog and ground it for whole hog sausage. It sold out quickly. I guess I identify with ya'll and your way of life. Prayers for God's blessings for you and your family.

Always learn something new from your canning especially when you are doing your hog processing each year. I showed this video to our youngest son 41 yrs old and he had never seen anything like this. My Mom canned everything she could get her hands on but she never canned meat and I asked her why, she said it was too hard, but from watching you it doesn't seem to be that hard, time-consuming like you said but it's worth it in the long run. ❤️

All we ever used in sausage was salt sage and home grown crushed cayenne peppers the sausage was cooked put in jars and melted lard poured over it and sealed the lard made good gravy it was put in a cool place which was not hard to find in some of the places we lived good video brings back memories of a long time ago have not done that in many years

When I was growing up we canned sausage and backbone and ribs till we got a freezer. They always said the grease would seal the sausage when it congeled.
The "donut" mix is probably from Cafe du Monde in New Orleans. They're called beignets, pronounced "ben-yayz." Soooo good with powdered sugar and a little honey. ❤ Love you guys!
I started using the Four Jars lids two years ago. They are really good. I had bought new Ball jars last year and had several failures with the lids that came with the jars. The Four Jars are so much better.

I'm wondering if you heat to eat with BBQ sauce before serving why not add a Tsp of BBQ sauce at the time of canning. The flavor would be infused in the meat for a superb flavor. I have to confess I used a pressure canner wrong the first time. After several batches of canning meat I started freeze drying my stuff. It's a lot of fun to use. Looks like your family eats real well.
It get a big crock jar 5 gallon one cook your meat put layer and put some lad over it and do the same thing tell you run out of the meat we do sausage that way
Question: When you can your ribs, do the bones get soft in the ribs? I canned up some chicken legs and couldn't hardly get them out of the jars. The bones in them were like salmon bones in a can.
Hi Megan. I looked at the Old Mansion seasoning website and did not a specific sausage seasoning. Do you make yours up by combining seasonings or using a premade sausage seasoning mix from Old Mansion.
Now when u go to use one of these meats that u canned, what do u do with the fat that will be on the top? Would u scrape it out and save it and use it like u would do when making ur own tallo or pork fat like I do with bacon drippings?
When you are putting the jars in the pressure cooker, are you adding any water inside the pot itself or is it just dry? Just found your channel and I’m loving it. We've always fried out the sausage and put it in pint jars with the grease and turned it upside down.
Grandmother did similar. She kept hers in a 2 gallon lard bucket on the floor by the stove.
