They didn't have the information you have now, they had to base it on peoples start to season and their prior body of work. Has it aged excellently? maybe not but it is what it is. I still think that the roster is good enough to win the whole tournament without a doubt. Also on Montembeault, he had some games where he got blown up because the Habs SUCKED for like 20 games, but in wins, Montembeault's save percentage is SILLY at a .949%!!!! and he's tied in 3rd in the NHL with 3 shutouts!! If I had to guess, they took Montembeault because when he's on, he is ON. His sv% in wins is .27 higher than Thompson's for example. It's a little weird, but I can see the logic too. They may have assumed that with a competent team in front of him, his number would look much better. Thompson should absolutely be on this team, I would argue Blackwood and Kuemper or even the flower just for the culture should have been the picks, but I can kinda get the Montembeault pick
Morgan Rielly is the Wade Redden of the Leafs. He's not a true number one spot defenceman, but continually gets used like he is and gets the opportunities like a number one defenceman. The last times when the Leafs had a true number one on the blueline was Borje Salming and Tim Horton. Ideally, Rielly is the top guy on the 2nd defence pairing. It's one of the main reasons why Toronto has struggled so much in the playoffs, when they continually face opponents with better bluelines (along with better goaltending). This season they at least have more depth on the blueline than they have in a very long time and the best goalie tandem they've had in a very long time, so things could be different. Vegas makes an average NHL goalie look like a Vezina candidate, because of the time you get in the Vegas zone with the puck on your stick before someone clobbers you, compared to in the defensive zone of other teams. It's a bit like how long a quarterback gets in the pocket before the other team can crush them. If Rielly played for Vegas he'd be a 4-5 spot defenceman.

Getting a bus your team needs in exchange for a player who had already decided to go the college hockey route instead of playing in the WHL is great asset management by the Seattle Breakers. The Victoria Cougars basically bought them a team bus because they balked at the taxes and duties cost to use it themselves. The Cougars got fleeced! 😂
Team Canada had to choose one of Adin Hill or Logan Thompson for the team, it is well known they did not get along well in Vegas which is why they aren't on the same team anymore. Canada was obligated to pick one of the two, and they went with Hill. They did not want both, to avoid any potential drama. Any kind of digging into the situation would have made Adam's rant about the 4 Nations unnecessary, if only he looked into it.

That said, I do believe that Thompson is the best Canadien goalie currently and should have been part of Canada. Personally, I think it should have been Thompson, Blackwood and Hill. Blackwood is not far behind Thompson is both GSAE per 60 and Sv%. And if you want more veteran, you can you with Talbot instead of Blackwood since he have a better GASE per 60 and Sv% than Binnington.
