It looks like she used the serger for the hem. It all depends, since it's for a doll and maybe just for the video. If it's for bald head children or adults, it's better double the fabric to hide any ugly seam and not scratching delicate skins. If you are going to sell better use double fabric and hide all the seams, it's more professional and delicate the project and more pleasing. It all depends on circumstances.
