Why does everything look so stiff in the new version? The original had so much clothing animation detail, made it feel so smooth and graceful, while the new one has none of that.
Because it's 3d. Same thing for SF3 graphics vs the SF 3d sequels... only with a smaller constrast in some details, because modern SF games have better physics technology than the modern SNK games. But it was still a huge loss for the franchise to abandon SF3's standards.

This is Fatal Fury, where chronology is observed, so Art of Fighting with a young Geese Howard happens first, then Fatal Fury with a child Rock Howard, then Garou with a grown up Rock. Also, while age doesn't really matter with great martial arts masters like Tung Fu and Jubei, Raiden and Hwa Jai are just your average fighters.
SF3, from 97-99, also looks better than the 3d SF sequels. And 2d Marvel (from 94-00) looks better than the 3d MvC sequels. So those are other examples.

Yup, almost every special effects in KOFXV looks ugly as bell. They really improved it in COTW.
