INGREDIENTS LIST
Garlic Chilli Chicken Balti
200G Medium breast diced chicken (Cut small pieces)
225ml approx Base Gravy
3 TBSP Veg Oil
25g Red Pepper
30g Onion
1 tsp chilli powder ( I use extra hot, use what you prefer)
4 green chillis
2 Tsp Bassar mix or Mix powder
5 cloves garlic sliced
1/4 tsp Tandoori Masala
1/2 tsp salt
Pinch each (Optional)
Methi
Black pepper
Cumin
Coriander + some to garnish

This is one of my favourite spices. Even at restaurants, I've only tasted it a few times & OMG!!! so nice. I really need to buy a hot burner for home. I assume the pan has some part in this given the slope of the sides as well.
Hi Karlosss. Last year we had a new kitchen fitted and made the mistake of getting an induction hob. And no matter what you read, it's nowhere near as good as a hot gas burner. I purchased a burner just like Al's in this video and it so so good. Not for indoor use mind so careful if you decide to! And yes, the sloping pans are important, and that's where induction hobs are no good.

The secret ingredient is the flambe. (Fire). smokes the curry amazingly
What kind of burner are you using there please ? I’ve looking at 9kW burners for an outside kitchen but wasn’t sure what would best best for me to use for balti dishes and also woks. Thanks

Hi Al, I've ordered a birmingham balti dish and just fitted a new gas hob with 4.5 kw burner in which im hoping will get me some decent results. I like chicken tikka in my curries, if I was to do a chicken tikka balti, would you suggest pre cooking the marinated chicken first, or cooking it from raw in the balti dish ? Thanks and keep the videos coming.

Looks amazing, need to get a set up to try this. Genuine question, would the burnt oil have any negative health effects if you ate this regularly?
If you make your own base gravy it is absolutely fine to eat regularly. All fresh ingredients... just be conscious of the rice intake and eat brown rice if you xan stomach it
@@rickzor2700 I regularly make als classic bir curries with base and love them but my question was more regarding the balti style which seems to utilise massive amounts of flame from burning the oil as an "ingredient"
@@camthebam10 oh I see, I didn't read what you wrote properly, I was half a bottle of wine in when I replied. I'd imagine burnt oil isn't great for you

I would be scared to death to have flames like that from my pan. I have an electric cooker so I am not able to generate that kind of heat.

Correct. You are talking about the pinch of cumin, black pepper and methi. They are optional. Read the ingredients list and tips. it's mentioned there. Thanks

If I was to make this my way, I would be marinating the meat for a few hours in all the spices, cooking of the onions for 30 minutes then the sauce for 20 minutes and the meat for another 30. That's authentic Indian timing. Can't make a real dish in less than 1 hour let alone 10 minutes. Sory Al you do good things but I gotta keep it real.
Shababs restaurant Birmingham turn these curries out in 5 minutes. Load of the preparation have been done beforehand which is why they are quick at end.
Mate, this isn't authentic Indian cooking, this is British Indian Restaurant style cooking, which its own thing. The reason why you can make this in less than 10 minutes is because the base gravy has already been cooking for hours.

Your main ingredient is the same, onions, only it takes longer, is easier to make and doesn’t taste as good. You quite obviously have never tried making a BIR because you’re too lazy.
