How To Make Greek Beet Salad | Roasted Beet Salad with Feta, Olive Oil and Oregano

- Here's a very easy and super delicious recipe for Greek beet salad. This roasted beet salad features feta, olive oil & oregano and a splash of the vinegar of your choice. You can serve this warm or cold and preparation is a snap as you can make this ahead of time thus giving you more freedom to socialize.
INGREDIENTS LIST
* 6-10 beets
* 1/4 cup Greek extra virgin olive oil
* 2 cloves garlic
* 3-4 tbsp. red wine or balsamic vinegar
* 50g Greek feta cheese
* Salt & pepper to taste

Seriously, best beet recipe I have ever eaten! PS watch the video, Ken uses oregano(!), not listed in ingredients, but man does it make a difference! Boiled or baked beets does not seem to make much of a difference but quality of beets does. Old, withered winter beets have no sweetness, choose carefully! Enjoy! Thanks once again Ken!

I add thinly sliced red onion and instead of oregano, I use Thyme...always a delicious salad that most people are pleasantly surprised seeing on the table!

I had only had plain, boiled beets as a child, so I obviously thought I hated beets. Until I saw and tried this recipe. I love this and also the colorful discharges it produces as aftereffect. Great dish to present the real flavors of beets and how to dress them up.

Isn’t that so true about thinking you don’t like something when actually it just wasn’t prepared deliciously. I felt that way about Brussels sprouts too but now I loooove them. But just boiled is not the best, so as a kid they were topped my list of dislikes. 😂
