    Ingredients :
    A:
    Jelly egg yolks(蛋黄燕菜):
    2 tbsp caster sugar (细砂糖)
    3/4 tsp agar-agar powder (燕菜粉)
    200ml water (水)
    1-2 drops orange colouring (橙色素)
    1/8 tsp salt (盐)
    B:
    2 tbsp evaporated milk(淡奶)
    1 egg yolk ice-cube mould
    Method:
    Place all ingredients A into a pot. Keep on stirring, let it come to a boil. Stir in ingredients B. Mix well, pour into egg yolk ice-cube mould. Cool then chill in refrigerator till set.
    燕菜蛋黄模1个
    做法:将材料A放入锅内煮沸,熄火加入材料B拌匀,倒入蛋黄模形,待冷却后放入冰箱至凝固,取出待用。
    Yam jelly filling (芋头燕菜馅料):
    A:
    150g yam paste (芋泥)
    1 tbsp agar-agar powder (燕菜粉)
    75g caster sugar (细砂糖)
    225ml water (水)
    B:
    150ml thick coconut milk (浓椰浆)
    1/4 tsp salt (盐)
    3 tbsp evaporated milk (淡奶)
    2 pieces pandan leaves, knotted (2片班兰叶,打结)
    Method:
    Place ingredients A into a pot. Stir well and bring it to a boil, reduce to low heat, add in ingredients B and mix well. Pour into small mould. Gently place in a jelly egg yolk into each mould, leave to cool and till set.
    做法:将材料A边煮边搅至滚,关小火加入材料B拌匀。倒入小杯里,在中间放入燕菜蛋黄,等待凝固取出待用。
    Jelly mooncake exterior skin (燕菜月饼皮):
    A:
    1 1/2 tbsp agar-agar powder (燕菜粉)
    1 1/2 tbsp instant jelly powder (即溶遮哩粉)
    150g caster sugar (细砂糖)
    600ml water (水)
    3 pieces pandan leaves, knotted (3片班兰叶,打结)
    B:
    300ml coconut milk (浓椰浆)
    1/2 tsp salt (盐)
    4 tbsp evaporated milk (淡奶)
    C:
    1 tbsp corn flour (玉米粉)
    2 tbsp water (水)
    D:
    1/2 tsp purple sweet potato
    powder (紫薯粉)
    2-3 tsp water (水)
    Method:
    Place ingredients A into a pot. Stir well and bring it to a boil, reduce to low heat, add in ingredients B,C,D and mix well. Remove pot from heat. Pour a solution into mooncake mould, place in filling and fill solution to the brim. Cool and then chill mooncake.
    做法:将材料A放入锅内煮沸,加入材料B,C,D拌匀。倒入少许月饼模内,放入馅料,再淋至满,待冷后放入冰箱,冷藏至凝固后取出。

    Thanks for the sharing. The ingredients seems for many, if only want 4-8pcs, how much of ingredients I need to use? Divide by 4?

    May i know if able to omit the purple sweet potato powder? will it taste weird?
    Did you put the yam layer in right after you pour in the purple sweet potato layer? Or wait for semi-firm then put in yam layer?

    I made 12 piece today n turned out perfect, I don't have the purple sweet potato flour so I added a drop of beet root juice.
