Hebbars Kitchen, thank you for this recepie. I have been looking for this for a very long tine. Plz share the traditional dhokla recepie which doesnot use eno, baking powder or baking soda. Basically a chemical free naturallt fermented recepie.
@@shwetaagarwal8224 first I don't know if its dhokla as traditional gujarati dhokla does not have chana daal - it looks khaman to me; I think it was fermented but I don't think it was fluffy, or had risen enough to make fluffy khaman! so here her recipe is a khatti khaman! instead of khatti dhokli!!
For instant dhokla u have to add eno. Actually eno gives fluffy spongy structure to dhokla so adding it makes its more tasty. I don't use soda sometimes little more soda makes reddish dhokla and taste also bad.

Eno can be replaced with the combination of baking soda with lemon If you don't want to use both keep this for fermentation for more hours like over night or 8 hours

I never seen to the point video like this in you tube 2,You write item, quantity, how much cook, thus make easy read also. 3, I suggest, make tips in video or end of video. Like, onion pakora, I think on medium flame to cook properly. Why?

I am gujrati and your recipe is perfect but I also add 2 table spoon oil in better so that dhokala will not feel dry

After fermentation why should we use Eno
Actually. But I felt she made of instant grinded dal and rice mixture. Because the batter was same in size after fermentation also.
