I'm using clarified butter in a lot of my recipes. Also called Ghee. I use it in my meals to add fat, taste, and calories. It gives a better taste than olive oil for certain meals and It doesn't seem to create the mess of butter or oil for transport. Also hazelnut butter ( Nutella) is a great addition to anything bar-like.
Don’t underestimate a good chunk of butter with your coffee before you leave camp in the morning. If you are carnivore or ketovore your body is already adapted to burning fat for your calories. Thus a good chunk of butter provides ample satiety and nourishment until a mid-day meal of high protein and fat. This works for those who run significant distances 5-6 days a week as well as hunters doing a lot of humping.
For a small investment you can set yourself up with everything you need to make your own pepperoni/snack stix and sausage. It takes some work, but just like making your pemmican you have ultimate control over the product and it's a good use of wild game cuts that otherwise may go to waste or end up in your ground meat. I make my own jerky, snack stix, summer sausage, smoked kielbasa and even leberwurst.
I buy London broil cuts of beef and have the butcher cut to 1/4 inch thick strips for making jerky. Some salt and pepper. Dehydration and your ready to go. Also a few avocados with a pinch of salt will help with fat intake. Water mixed with your favorite electrolyte mix is a good deal too. Walnuts, almonds, pecans, macadamias, pistachios. Just some foods I take along. I do my best to stay keto for all day energy levels. There’s more but it depends on how long I plan to stay out. I’m definitely going to look into your pemmican video. Costco sells "bacon bits" that are realistically just shreded bacon jerky. A 2 lbs bag is about 10$ and it goes well with anything else you take on the hunt. Aside from that regular old butter is a staple in my pack. I can heat water throw it in my thermos with a pad of unsalted butter and drink it, add it to coffee or tea, use it to fry up pieces of a kill or fish ive caught while out and as long as its not September down in the lower 48 butter is going to be pack stable. I found a recipe for "carnivore bread" and its actually pretty good. Its made with powdered milk and powdered eggs. Haven't made it while camping but would be good.
Have you heard of the Keto Brick cliff? I use it all the time when out in the mountains. It’s a 1000 calorie “protein/fat bar.” Balanced macros for staying keto. It’s my go to
i take pemmican and beef jerky with me on a a couple day hike. If im hiking ~24 hours or less I will hyperhydrate with glycerol and creatine leading up to it, in order to just carry my lifestraw. You will retain intracellular water from the glycerol, which doesnt raise blood glucose (it is part of a fat). Many athletes like marathoners and triathletes do this.

I pack in raw almonds for a good source of fat. I find the almonds pair well with coffee. I also bring mtn ops electrolytes stm and their vitamin c. On cold hunts a hard boiled egg is a good source of fat and protein. Other than that I pretty much eat the same stuff minus pemmican.
👍on almonds. Hard boiled eggs are one of my staples from a vehicle based camp of lodge. Now that I think about it, not sure why they would work for a few days on a remote hunt either.
I dehydrate the thin sliced strip steak that Costco sells. Just salt it heavy and dehydrate. It is delicious. I’m going to make some pemmican though. Oh and I always add butter to my coffee. That chocolate ganache would be good melted into a cup of coffee.
I usually consume around 3500 Kcal whey I’m in the mountains, usually 50 to 60% of carbs. I really like your diet cause is very low volume compared to a high carb. They make fillable popsicle bags, may be better or less wasteful than the sealer bags because of the extra border to make a bag. You could figure out how many you'd need in a day and then vacuum seal those all in a pack.
Would coconut oil be better than butter for your chocolate to keep it solid at warmer temps? Maybe figure out if there is something you can add to increase its ability to stay solid.
Cliff -- Have you ever tried the new Paleovalley Grass Fed "Venison Sticks"? I'm considering it; but haven't tried them. Hesitant because I am inexperienced with eating anything venison (i.e., deer meat). On their website, there are no reviews yet. I guess that means it is a very new product. I like their Summer Sausage (Grass Fed Beef) meat sticks. But when the first ingredient listed is venison I'm not so sure about how it will taste. They advertise that it is 100% Grass Fed, by the way. Thanks. 🙂
I’m curious what would happen if you made the ganache with some of the Anthony’s heavy cream powder in addition to or instead of the butter. Wondering if it would firm it up in warmer weather.
The fruit is good for sugar trickling when you are making a big long climb or working hard enough to get your heart rate above zone 2 for an extended period and you move into burning more glycogen stores from the liver. All fat adapted ultra athletes use the sugar trickle when they are climbing on the bike or running up hill.
I agree with everything but loosing weight on a hunt. Only for me, becouse I can only speak for me. My weight fuxuates all the time and I do concrete for half my life. But I can see how it would shit some people down.

Basically, by volume, 1/2 tahini, and 1/4 ghee and 1/4 coconut oil with other stuff like maca, cacao, a little honey, turmeric, vanilla extract and cayenne. It's fantastic stuff if your keto. Not bad stuff if your not keto. Let me know if you're interested in the actual recipe. I believe there are variations of recipes on line.
Lower hr levels I run pretty well on fat, but if I am going to be higher hr levels 145 plus I need more carbs to keep up, so I don't bonk. So long hard climbs going faster I am going to need big carbs during and right after then I can rotate back to more fat. Everyone is different got to spend time figuring it out for yourself. I would also encourage everyone in a controlled environment to get yourself to bonk basically run out of calories/ glycogen stores in your muscles. It sucks but you learn what it feels like so you can prevent it next time early enough. Just my 2 cents
Yup, my diet is shit, because I am lazy. I probably eat better during the colder months when I pack more summer sausage, cheese, and crackers - instead of various granola, protein, nut, chocolate, etc, etc bars during the summer . What's pathetic is the only reason i do this is because eating frozen bars feels like your going to break your teeth. I got dinner in spades though with a home freeze dryer. Home cooked hot chow every night! I'm still working out what's best, beef stroganoff is a definite winner.
Have you done intermittent fasting while on keto/carnivore while on a backcountry hunting trip? If so, has it been successful keeping engery levels stable? Im on keto and do IF (16/8) and dont eat breakfast until noon. Planning on doing a CO elk hunt next year and was curious
I spent 6 months on trail thru-hiking the Appalachian Trail in 2023. 2,200 miles, 15 to 20 miles per day, 35 lb pack. I did it carnivore and one meal a day (OMAD). My favorite goto food was a 24 oz chub of Usingers garlic salami (80% fat, 20% protein, 2,400 calories per 24 oz chub). It was a challenge to eat a whole chub, but that was my entire day's nutrition (2,400 calories). I was always fully satiated and full after eating. I hiked in a fasted state and ate just one meal at the end of the day after I was done hiking. No problems with fatigue or lack of energy. No problems with health or nutrition whatsoever. Everything went great. Never hungry. Weight was stable. Vitals and lab bloodwork were all fantastic. Resting heart rate was in the 40s.
Great tip. I personally have an intolerance to whey protein, even a single bar that has it will get me sick. But for most folks I think you are correct, great alternative to powdered cream 👍

When I look at it, it does seem like their is decent cause to keep ones cholesterol in check. Not a lot of nutrition science is real science, but that one has been researched a ton... who knows.

I like making meat loaf bars or balls. Use pig skins instead of bread. Instead of oysters I chose sardines in mustard-guess I’m getting old.

Maybe a pemmican popsicle. Use a popsicle stick in the center of each piece. Just a thought.

Also if you don't like pemican. Look up umchu bars as long as you are good with coconut. 7.5 oz for 1100 calories.
