Because he's no longer vulnerable and telling embarrassing truths -- now he's just dealing with some jackass.
I feel like it is a part of his personality in a way. the sense of humour and wit part of johnny. I think this is what makes him such a good actor. Each character has a small part of johnny himself in them.
