A neat touch I noticed on Ramatra's monk skins is that when he is transformed, the spot connecting his two large arms features a small portable shrine shaped like Buddha.
My fav for Symmetra is her saying different voicelines with her magician skin, my fav "Presto!" when she kills someone with a melee, or her dragon (and hydra?) skin when she kills genji or hanzo and says "You are no true dragon."
