Rice is life, as they say, but how it's made around the world differs greatly. In this episode, we've brought in Brad comes from a Libyan Jewish family, and Ted who is first generation Greek, to explore this beloved grain. By swapping a Libyan red rice with lamb and a Greek Spanakorizo, our guests try new techniques and new flavors as they learn about one another's cultures in the kitchen.

Beryl, this video is so wonderful. Brad and Ted are so wholesome!!! The Syrian Jewish cooking would not add cheese to be kosher, but I'm glad Ted's intuition was right that the creamy saltiness of the cheese would add to the dish. I wish them both so much happy cooking in the future.
I'm not jewish, but I started applying Kosher rule of avoiding mixing meat and dairy or having dairy only 2 hrs after or before I have meat, since dairy can interfere with iron absorbtion from other food sources and it improved my iron levels in no time while also taking supplements for a period and I find it's helpful in maintaining those levels aswell, even oversll better on my digestion.
exactly! we don't mix meat and dairy, but to get the creaminess and saltiness, maybe could he done with coconut milk snd olives?
or maybe vegan cheese? do they make vengan feta or balgeret?
@@shevahauser1780 They do make vegan feta 😊. And there's a few vegan cheeses that melt well! Coconut milk would definitely add creaminess to the dish, too.
Although, you should definitely warn anyone who's sensitive to the taste of (not allergic to) coconut. And I don't mean someone who doesn't like the taste of coconut but there are people who can taste certain flavors very well. Like my sister who can taste the coconut in the Chao brand vegan cheese slices after eating too many in her sandwiches 😅.
As a vegetarian whose SO was born in Athens, I've cooked spanakorizo (Σπανακόρυζο) many times. I'm sure my SO would have loved Ted's slightly different take on it. I know he would have loved Brad’s Libyan Red Rice with Lamb as well. What a wonderful venue, Beryl, for showing our similarities through food while celebrating our cultural differences! Thank you for the links in the description so that we can make these delicious dishes at home. And, thank you PBS for recognizing a good idea when it's presented to you.

A Greek-American friend (r.i.p.) gave us her recipe for spanakorizo. It was delicious but it didn't have tomato in it plus it had a lot more feta. Being a tomato-lover, this version sounds fabulous; will definitely try it!

I'm half Korean and half white but adopted by a Dutch family when I was 2 and raised in Arizona, USA. I love hot sticky rice w/ kimchi and soy sauce. I'm not sure why this is such a comfort food for me because I didn't have it as a child; at least that I can remember. But, I love it and sometimes, I just eat that for the whole day.
My favourite dish is called "Biringhe" it's a dish in the Philippines that is inspired by Paella. It has Turmeric, Coconut Milk, SHrimp and Chicken Liver.
I really enjoyed this episode. My husband is Japanese and influenced by him, I grew a lot of the Japanese herb shiso last summer. I had so much I preserved it in a traditional way by chopping up the leaves and layering them with salt. I've discovered that an easy delicious way with rice is to stir some of the salted shiso through hot cooked white rice with butter, tasting and carefully adding the shiso as you go until you get the perfect salty herbiness. That's really all you need for a simple rice side with anything. You don't add salt or soy sauce or anything salty to it because it gets all it needs from the salted shiso but you could add vegetables or anything else. Cooked edamame beans would be really nice. Maybe with a runny fried egg on top. :)

I've been watching these a bit out of order, and when I saw this early one in which she barely features, it made me realise how much Beryl's increased presence in the later episodes brings to the format. Just her being around the cooks in their own kitchens changes the vibe to something much more comfortable/comforting and special. Not to say this one is bad or anything, but Beryl definitely is the secret ingredient in the Pan Pal sauce
Another great epidose of Pan Pals Beryl! My favorite rice dish from my culture are "Holupsti" - Ukrainian Cabbage rolls. My family made the cabbage rolls with just a rice and onion filling - no meat whatsoever. And it was cooked with butter and more onions - no tomato sauce that is commonly used.
I eat rice with everything but "Arroz con Leche" (rice pudding) is probably my favorite!!
Again, love this concept!! My favorite Filipino rice dish is #1 garlic fried rice because it goes well with anything. The most iconic rice dish is a rice porridge cooked in chicken broth with heavy flavour of ginger. It's plain, but meant to receive toppings, such as: calamansi (citrus), salted or smoked fish, crunchy pork cracklings, spring onions, chilies, fish sauce......whatever else you desire! It's called LUGAW.
This Series is so much fun. I love it.

It is striking how there is so much commonality between all of the Mediterranean cuisines. Favorite rice dish? I'll go with the culture and rice dish I grew up with and say risotto, Tuscan style. It's very different than the Milanese risotto people are familiar with in the US. The texture is not porridge-y, and it is more like jambalaya or dirty rice, which are my other favorites.
I enjoyed this episode. It was interesting how both dishes shared similar ingredients but had their own cultural twist. The favorite rice dish from my adopted culture is Icelandic rice pudding (grjónagraut). It is a simple pudding made from short grain pudding rice, salt, water and milk. It is not sweet, but diners can add raisins and cinnamon sugar as they wish. Surprisingly, we serve it as a main course rather than a dessert. People often eat it along with liver sausage and blood pudding or with bread and cheese. It seems strange, but the combination is quite tasty and makes a satisfying lunch or dinner. I think it is a dish that reflects times in Iceland's past when people needed to be very frugal. People still enjoy the chance to eat main dish rice pudding. At Christmas, people enjoy a more dessert version of rice pudding with cream and a sweet cherry sauce. An almond is hidden in the pudding. Whoever gets the almond in their serving wins a prize.
These episodes are great! I hope to see PBS bring Beryl back for another season!
My favourite rice dish is ying yang fried rice. A fried rice where half is covered with a sweet & sour tomato sauce with chicken and onions, and the other half is covered in an eggy white sauce with peas and shrimp.
This is also my favourite takeout rice dish although most Chinese restaurants in Vancouver, Canada will have it on the menu in English as honeymoon fried rice or love birds fried rice not ying yang fried rice. Most likely because the actual Chinese name 鴛鴦炒飯 means male and female Mandarin duck (the phrase is used to describe loving couples since the birds mate for life apparently) fried rice. No actual duck used.
Risotto alla Milanese! not because I'm ethnically Italian, but because one of my parents went to high school in Milan and has never really left that influence behind

A favorite dish in Nicaragua my native country is “Arroz Aguado con Pollo”, or Soupy Rice with Chicken. It is a favorite with children and when you are under the weather. Everyone loves this dish since your mom cooked it for you on your childhood.
Different cultural backgrounds sharing cooking and coming up with something new.
It's a tale as old as time and exactly explains how new cuisines pop up when cultures migrate. This is the story of culture in a cool microcosm, this show. 💪🏿💪🏿💪🏿

I only discovered leeks about 10 years ago Now I make a chicken/leek soup that I serve over brown rice; it's one of my husband's favorite meals!

Both dishes looks yummy. It is wonderful that despite different cultures & religion, a simple thing like a rice dish can bring people together.
My favorite rice dish is Cantonese / Hong Kong style “joong” or sticky rice parcel traditionally eaten during the Dragonboat festival
I don't know about country/culture exactly, but I love making ancient grain rice blend. It has a low glycemic index. I don't have any particular recipe, I just usually make it with beef broth, hamburger, dried onion, and carrots.

I am loving these Pan Pals videos! More please! My favorite rice dish is Bengali-style khichuri, which is a rice and lentils dish. There are two styles of making it--one is more like a porridge or oatmeal consistency, which is the version I like. It's creamy and warm and filling--the perfect comfort food on a cold, rainy day, served with fried papar, mango pickle, and beguni (eggplant fritters). So good!
Beryl is such a gem! So charismatic, I just love her personality. She shines such a bright light 🤍 Great series, can’t wait to see the next swap
Its not of my culture (parents were from Oklahoma), but Mom always cooked what she called Spanish rice about once a month. It was something like Mexican rice, but with more tomato and chopped onion. Plus it had ground beef. I'm hungry for it now - going to have to see if I can duplicate Mom's recipe (she's gone now).

Both recipes are going onto my must try list! I love PBS for finding Beryl who is my favourite RUclips food influencer. When I was in highschool, I was obsessed with these building blocks of food and culture. From the Romans to Cajuns, I loved finding out how food evolved from the influences of location and history which was often a result of hardships. Please take it to the next level PBS!

My family never made rice dishes growing up but we had access to Spanish rice for cheap from countless Mexican restaurants nearby and I’m obsessed with it. The perfect one should have a pop of savory flavor from chicken or vegetable stock and not just taste like tomatoes.
I will try this for lunch today 😊 far too hot where I am to do any cooking, oven bit of a challenge too but this looks like very little dishwashing 👍🏻 will try it with Cypriot Zucchini though which I find more aromatic than the dark green version. They come in a round version too. Great Idee and I bet very relaxing to do the coating one by one provided you have no one disturbing you. 👍🏻

I am so enjoying this series. I love listening to the cooks connection to the food and the reactions they have to the dish they eat. Such a great idea and such a lovely show to watch. I will try the Greek dish for sure. Love this series. Our family loves a dish we cal, cheesy rice. Not sure if many other people make it. But we love it
I’m South African but I love Mediterranean foods in general and would like to try both of these of these if I can find recipes. My favourite local rice recipe is breyani, which is a curry dish. Don’t ask me to make it though, as I have never been successful. There are plenty of great cooks in Cape Town who could make something you’d enjoy!

I loved this video! It would be great to see Bangladeshi tehari which to me is almost like a cross between biriyani and a meat pulao. It’s made with a special small grain rice which is so aromatic.
