Those ribs looked amazing CJ. That Smokebomb is one of my favorite complimentary rub. I usually put it on with the initial application of the rub and then dust the protein before serving to give it that extra kick. Nice Cook!

I made this exact recipe today (with a slightly different dry rub), and it was amazing. It took quite a long time to raise the temperature, and the middle never got to 205 even after about 6 hours. But they're great! Thanks for the recipe.

I prefer 275 F Benny. Yes I use it but convection doesn't change a whole except for promoting more even cooking.
