    Hello Bee and Theo, the cherries in Portugal are the best in the world. There's something about the balance of tart and sweet that makes it special. I know Bee you don't feel comfortable making

    Another great recipe for the manky cherries is to buy a bottle of the cheapest gin you can buy and add two cupfuls if sugar then pour over a jar half full of cherries … bruised broken etc it doesn’t matter. Leave in a dark corner of a cupboard and forget them. When you fine them again strain off the liquid and you’ll have the most wonderful cherry liquor. Enjoy 😊
    Of corse you can do this with damsons pears etc just about any fruit.

    To pick any fruit from trees easier and faster we used cloth rectangular satchel that we kept around our neck.That way we had both hands free .My parents and grandparents had a lot of fruit trees.Cherries were my favourite.This video reminds me very much of that time.Thank you.

    When you use the straw to pip the cherries, just push 5 cherries onto the straw and then push them off the end. It's much faster that way.

    Those lids are fine and not to worry about using them. My family and many have used them for many years making wonderful jams from berries of many sorts. To avoid mould, you can put a baking paper with vinegar under the lid.

    How wonderful Bee picking your own cherries! My granny used to put the heart of an apple wrapped in sterile gauze so as to add the pectin from the apple seeds…. I tried it with orange and strawberries jam …. Ask the grannies!

    You can make your own pectine especially as you have a lot of oranges: you take the seed from oranges (½cup would likely be enough depending on the amount of fruit you have to make the jam.)
    Ok so you take your orange pits and soak them ovenight. In the morning you will see a transparent gelly around your seeds. That's pectin. I found this in a marmelade recipe many years ago.
    I don't remember the amount of seeds or water, as I only made it once. What I remember is that I put all the seeds from the bag of oranges that was donated to me and soaked them in a cup or so of water. Btw the marmelade was delishes.

    Hi Guys, here in Switzerland people use Cherry stones to make hot water bottles, they put them in a cotton bag and then put them in a microwave and heat them up, much safer than boiling water. Just a thought, also could you trim the trees with the cherries still on or is it the wrong time of year? would speed up the picking Greetings from Switzerland ....Back to my cherries:-)

    I lived in Provo, Utah in the BYU University... there are many farms, and I helped in cherry 🍒 farm...they have, and the farming families also, they sell the “tree”, who wants collect all the fruit in each tree...and it was way cheaper of course being truly delicious for being freshly collected. You can sell the extra ones you have...and saving them for fall and winter is delicious ...memories...we used to get together in the church to make it together ...so many wonderful ladies and of course having the many kinds of delicious fruit during the winter ❤

    I love cherries. Having so many cherries tree’s is wonderful. I can’t even imagine how many recipes there are for cherries. I so nice to see you content and happy, Bee. Your looking beautiful and I can tell you and Theo are really enjoying your home and the land. Love all your videos.

    Aloha Bea! There is a difference in measuring cups. When measuring dry ingredients, you need to use the dry measuring cups. When measuring liquids you need to use the other measuring cup, for liquids. There is a difference in measurements. For dry measuring you should fill the cup to the top, then using a flat surface to make a level cup. Depending on what you are making, using the wrong measuring cup, can affect your recipe. There are videos you watch explaining the use of measuring cups. Happy preserving and baking. Love from The Big Island of Hawaii.

    another beautiful episode! and as said below, the pips are brilliant as "hot water bottles" (sewn into a square of fabric), just heated carefully on top of a grid of a wood stove or in the microwave.

    This is so neat. Bee, you did a beautiful job on those cherries🍒. They look pretty in the jars and know they taste yummy. I think maybe sell the fruits you have as an income generator. Pruning really does a wonderful job for the tree and yield. Also, fertilizer twice a year for all fruit trees will make the fruit sweeter and juicier. Job well done.

    I don't know anyone who doesn't love cherries. The taste is bright and delicious. My grandpa only had one arm but he canned a very lot of cherries and we ate a lot of them when we would go to Paradise, Calif. to visit them often. That was in the 50's. It is so nice to see you and Theo smiling and working on your Hugh property. Thank you for letting us come along on your journeys of life.

    Bee is cherry picking the cherries, LOL!!! If you take a bottle with a very narrow opening, put a cherry on top of it and then use a straw or a stick, it goes faster. You can also freeze jams in any container, even glass ( just don't fill it too much), or plastic or silicone bags, much easier to preserve, thaws fast. You can put it in tiny containers so that you have the quantity you will use in a couple of days. I also live in the Mediterranean and know how hard it is here to preserve food in warm climate, so freezer comes to the rescue:))))

    Theo, you worked your butt off in the hardest and worst days, taking on HUGE PROJECTS! Things that would have been so daunting to most people they would not have even considered starting!!! And now you two have a stunning home in one of the most beautiful places..I could only dream of such a place, and know it would never be mine…unless you take house guests. It is spectacular. You both worked through the worst of times. I hope this is just the start of the BEST OF TIMES!

    Bee, you need a fruit pickers ladder, which will allow you to get into the middle of the tree! Also having a fruit picking bag, one that holds a bucket would be mightly handy too, it allows the picker to use both hands to pick! The cherries look awesome and canning is the way to go, so you can use them up in all sorts of things in the future!

    Also you can run a "you pick farm", plant blueberry bushes too, and Strawberries, and you would have to buy pint, and quart baskets, and scales, and possibly ladders, have an area down by the road where people park, so they walk up to the orchard, they can't steal berries or cherry without paying for them

    Bea, put some fresh sliced ginger in with your next batch of jam with a pinch of chili pepper. Great on bbq chicken or a topping on ice cream. Yum.

    If you have a crab apple tree on your property, they are full of natural pectin and when made into juice can be added to any jam or jelly recipe!!🇨🇦

    I've made jam a few times and never used pectin once. I was told by my mum that I have to make sure that the fruit is a mix of ripe and not so ripe. The unripe fruit has more natural pectin in it. I added fresh lemon juice for additional hit of pectin. I also used standard twist top jars as I'm recycling jam jars I've already got.
    Tbh, I think you can throw any fruits together and make jam. But there are some combinations that work really well. My favourite so far was using the plumbs we grew, and then we added in brambles we collected locally.

    Dark cherries make the best pies. Bea you can make up your pies with the pie crusts. Then cover with heavy aluminum foil. Freeze. Then just pull out; place in cool oven. As oven comes up to baking temp it thaws the pie. Yum anytime you want a fresh pie. You can do with peaches and apples too.

    I love that you are able to preserve your own produce #lifegoals
    We also struggle to get the American style canning lids here in South Africa. We can buy the jars with the lid and rings, but struggle to find replacement lids 😅 Thank heavens for Amazon and city living. There's a recipe book called "Ball complete book of home preserving" that has 400 canning recipes. I highly recommend it

    Grated granny smith apples add pectin to jams. It cooks down and works great at thickening. So many cherry trees! For this year, you could have a cherry picking party with your friends and neighbours?

    This is just an FYI because I watch a lot of people who can and I’ve only done it a couple times in my whole life in fact I can something only about four weeks ago. Here before you close up the jar to stick it in the boiling water they always wipe the rims off with white vinegar because if there’s any kind of anything on the rim it doesn’t seal all the way so this way you’re sure to get clean from drippings off the jar before you boil.

    you really should look at getting a shaker with all those fruit trees. You can get little hand held ones for as little as £140 and just lay tarps under the trees, or go whole hog and get a shaker attachment for the tractor. You can get ones that have a built in catcher for all the fruits. they work on all fruit trees and only take the ripe fruit that is ready to drop. they really are a game changer, especially when you have a lot of fruit trees to manage.

    Bea….FYI…do you know how to make freezer jam? It’s so easy and a way to preserve them for years. Much easier than the traditional way. And, they taste like you just picked from the tree. Try it!

    Hello from the Jersey Shore. You could open the orchards to the public for picking their own cherries. Of course, that's only if you have enough for yourselves. Haha, I can't believe you've been there for 3 months. You have done so much there. Your kitchen looks so homey and comfortable. Bee, you definitely know how to handle the cherries.     Hubby doesn't like pectin, so I make cherry jam with just sugar and cherries. Our cherries are too sour to eat straight off the tree, so we have to do something with them before they're edible. If you're working with sweet cherries, you'll probably want to add lemon juice to the mix. I don't officially "preserve" them either, so our jam needs to be kept frozen until ready to eat. It turns out super yummy, so friends and family are always clamoring for jars. It's a LOT of work though. Good luck!

    Put a little liquid in the jar first to help stop air becoming trapped.
    I so agree about cheery pipping its a nightmare but later its a godsend.

    Do you have Elder on your land?
    I make elderberry cordial every autumn for my son who is now in his 20's, he loves it.
    Don't forget to do pie filling in jars too, when you make pastry always make double and freeze half then in the winter you can grab it out the freezer and dump a jar of cherries, apple, rhubarb etc in it and home made pie/tart with no extra work.
    You're going to become the next homestead girl. 🥰

    Apples have natural pectin, you could try adding an apple. The running jelly can be used on icecream

    I agree with what was said at the beginning about hiring professional pickers and possible setting up with local stores on selling them or markets. Seeing they are ripening now, for this harvest your very pressed for time. I miss the orchard here where you could go and pick your own, not sure why it closed down but it was a staple icon where everyone went there year after year to pick cherries, apples, plums , we used to buy apple butter there and apple cider every year. Good luck in all you do!

    Hi there! In the UK the jars with the lids in two parts are made by Kilner. You may be able to get them in Portugal...

    My mouth was watering looking at all those cherries😂 Bea if you put a whole lemon cut in half when cooking cherries then take out before canning, you will find the pectin from lemon will be sifficient to set the jam. ❤

    The canning you did is how I used to can my cherries. We would pick like 250 lbs of cherries. I miss eating them. I however cut the sugar amount back and when I took them out of the canner I put a tea towel over them because don’t want any breeze to come by and burst open the jars. Great video bea. You will get the jam recipe down it’s a tweaking process. I also made cherry juice and canned it. So you should have plenty of cherries for that too.

    Think the jars you are talking about are kilner jars. When I was young we had a cherry orchard at the back of our garden, the farmer used to supply fruit for Marks and Spencer and Wimbledon. The cherries were the best I had ever scrumped 😜❤️

    You should really think about getting a cherry destoner. I just got myself one for plums and I know in Germany you can find the cherry ones. Makes life so much easier.

    Lovely video. Cherry jelly to have with cheese or on bread or toast is tasty and easy.
    Use some under ripe cherries as they have more pectin and/or squeeze half a lemon and chuck the squeezed half in too as the skin has quite a bit of pectin. No need to de stone or even take stems off. Place in pan , cover with water and cook 20 or 30 mins or till soft . Give them a push/squash with a potato masher or jar or whatever then strain through a piece of muslin or pillowcase overnight. Don’t squeeze at this stage or your jelly will be cloudy.
    Measure juice and for every cup of juice add a cup of sugar ( I only use three quarters of a cup of sugar to 1 cup of juice). Boil till setting point is reached . Bottle.

    OOOO try making maraschino cherries not sure what variety of cherry you have but is typically made from Royal Ann, Ranier or the Gold varieties. I love them and they are so expensive to buy how lovely that you can make your own !

    Pick one eat it, pick one for the bucket. That is the way we did it when I was a kid. Love cherry pie and all the other cherry produce items. Love to see how much has survived the fire and flood.

Have you ever thought about a little Glamping area so that Explorers and Fruit Pickers can come stay for a week and enjoy the beauty of Miracle mountain. Glamping just another great way of Miracle Mountain making money for you.
    I would certainly like to stay for a week and pick cherries and go for long walks and explore. God bless you guys.

    I suggest the book The Canning Kitchen 101 Simple Small Batch Recipes by Amy Bronee. Her recipes are amazing and you can always increase the amounts if you want bigger batches. For cherries she has Bing Barbecue sauce, sour cherry jam, sour cherry jam soda syrup, sweet four orchard chutney, sweet red wine chutney and sweet sunrise jam (contains orange juice & zest). I like to make fruit & pepper jams. I have a raspberry jalapeño jam recipe I bet you can switch out for cherries if your interested. I do purée the peppers…it’s a texture thing for me. In the USA it’s popular to pour over a block of cream cheese and eat with a buttery cracker. Mostly, we eat it during the holidays or munch on it when watching sporting events.

    Sometimes we pit the cherries and place them on baking sheets then freeze them. After they have been frozen we fill ziplock baggies with the frozen cherries and stack them in the freezer. It makes for a delicious frozen snack on hot summer days.

    If you can some as pie filling or fill for breakfast type cakes/rolls, add brown sugar instead of white , gives an amazing flavor.

    Apparently, they use weki jars in Europe.. another way to preserve your cherries would be to use vodka or rum with sugar... They would be nice for Christmas. Xx
