  • Welcome to the new series The Ex Food Files, where we recreate all the favorites you can no longer get.
    Episode 1 - Bob's Big Boy Burger Copycat Recipe.
    The signature Big Boy hamburger is the original double deck hamburger.[57]
    The novel hamburger started as a joke. In February 1937, members of an area big band, who were regular customers, visited Bob’s Pantry, one asking, "How about something different, something special?"[58] [emphasis added]. Bob Wian improvised, creating the first (then unnamed) Big Boy, intending the thing "look ridiculous, like a leaning tower".[58] Demand for "the special" soared but Wian sought a "snappy" name, which became Big Boy.[58][note 6] In 1938 the Big Boy hamburger cost 15¢.[60][61]
    The Big Boy hamburger inspired and was the model for other double deck hamburgers. This includes McDonald's Big Mac, Burger Chef's Big Shef and Burger King's Big King.[62][63]
    The Big Boy consists of two thin beef patties placed on a three layer bun with lettuce, a single slice of cheese, and either mayonnaise and red relish (a combination of sweet pickle relish, ketchup and chili sauce),[64] Big Boy special sauce (often called thousand island dressing) or (in some locations) tartar sauce on each slice of bun. (Regardless, the Big Boy condiment used was often simply referred to as "special sauce" on menus chainwide.) Wian used a sesame seed bun while Frisch's used a plain bun and included pickles. The Big Boy hamburger originally called for a quarter pound (4 ounces) of fresh ground beef, but later, franchisees were permitted to use frozen beef patties, and the minimum content reduced to a fifth of a pound to offset increasing food costs. Other specifications were exacting, such as the bun's bottom section being 1½ inches high and the center section ¾ inches, and 1½ ounces of shredded lettuce used.[65]
    Originally, the Big Boy hamburger was the only common menu item required of all Big Boy franchisees
    Named Big Boy franchisees are listed below with territories, time span, founders and additional notes, as known:
    Abdow's
    Arnold's

    Yoda's
    A Big Boy Restaurant in Chōfu, Tokyo, Japan.
    Big Boy also operated (or planned to open) restaurants in Egypt, Saudi Arabia, Brazil, the Philippines and Thailand.[167]
    The inspiration for Big Boy's name, as well as the model for its mascot, was Richard Woodruff (1932-1986) of Glendale, California. When he was six years old, Woodruff walked into the diner Bob's Pantry as Bob Wian was attempting to name his new hamburger. Wian said, "Hello, Big Boy" to Woodruff, and the name stuck.

    It is on my bucket list to eat an original Big Boy.
    Almost all the restaurants are in Michigan so we need to do a vacation there.
    I do not care how many stories they can come up with how the Big Mac was invented. I am convinced they did their own version of the big boy and it was a brilliant move.

    This channel needs about a billion more subs. This is an excellent idea. I don't know how EX it is, but I have fond memories of Fazoli's bread sticks and baked spaghetti. They closed all the Fazolis around me when I was like 20 so I miss them so much. I don't know about anywhere else. But I miss them.

    Bob's Big Boy Big Boy Burgers had a red relish and not the thousand island type sauce most of the franchises had. They also did not use 1/4 patties. More like 1/8 lb. Bun, mayo, shredded lettuce, cheese, patty, bun, mayo, patty, red relish, dash of salt, bun.

    • @WhitfieldsFoodRevue
      @WhitfieldsFoodRevue  5 лет назад

      This was different regionally, as I explained in the video and I went w/ the general consensus of the employees I spoke to.

    • @ross1962
      @ross1962 5 лет назад

      I probably made a thousand of those in the late '70s/early '80s while working at Bob's. The only regional difference in the Big Boy hamburger was the sauce. After Marriott took over operations in the late '80s, they did introduce a larger burger called, "Super Big Boy".

    The first job I worked as a cook was at Bob's Big Boy in LA. That was 40 years ago and the store in which I worked was under the management of the original Glendale store.
    Bob's has great salad dressings - 1000 island and blue cheese. There must be regional differences in the burgers, because the SoCal stores didn't use dressing on the burgers. They used mayo on the bottom and ketchup-relish spread on the top of the upper layer burger. Also, they didn't butter their grilled buns.
    Nice job on your part and that burger looks great. Yes, McD's stole their double layer burger concept. But Bob's was a diner and not a QSR. It couldn't compete with Denny's, IHOP and the rest, as it's all-day dining concept didn't square with their image as a burger joint. I don't think McD's played a big part in the chain's downfall.

    Thanks. I lost my legit sauce recipe and could only find the bogus ones. I knew there was buttermilk, chili sauce and Worcestershire in it. I also picked up some big boy seasoning salt in my travels. Not sure it's any good, but i'll try it on the meat.

    Is quarter pound patties accurate? That sounds like a bit much for a double burger from the big boy era. Maybe more like 3oz patties?

  • @Lawomenshoops
    @Lawomenshoops 2 года назад

    As somebody else mentioned, the original Bob's Big Boy burger in CA, used red relish and mayo, not that sauce you used. There is also a super Big Boy Burger, just bigger patties, maybe 1/4 lb.
    Another YTer, thinks using Heinz cocktail sauce and sweet relish, comes very close to Bob's red relish!

    There are more locations than that. The ones you showed in Michigan were "Bobs" Big Boy. In KY and OH there are still a ton of locations but it's called "Frisch's" Big Boy but it's the same thing as Bob's

      The ones in Michigan are - or were - Elias Brothers, not Bob's. Now they're just called Big Boy, no franchise name. The only Bob's left are in California. The two in the Cleveland area were originally Manners Big Boy and the one in North Dakota was once known as McDowell's Big Boy. Frisch's Big Boy (Ohio, Kentucky and Indiana) are now independent of the Michigan franchisor. One Frisch's near Ft. Wayne is known as Azar's Big Boy. The Michigan company is trying a new "fast casual" type restaurant known as Big Boy Burgers and Shakes. The company prototype is in the Cleveland area.

    The demise of Bob's Big Boy had nothing to do with McDonalds. They were never direct competitors. It had more to do with parent company Marriott Corporation trying to increase profits and making huge changes that didn't really work out. Additionally the family restaurant trend had begun to decline.
