I made this pudding on Saturday, and added vanilla, cardamom, cinnamon and pistachio nuts and desiccated coconut. I also made a strawberry & cherry coulis to go with it!
Every1 loved it!
I took some round to my mum for Xmas as she is in a nursing home now, she ate it all!
So yes, this dessert is a WINNER!

Oh yummy! Fresh coconut isn't always available. WOULD canned extract work ok for this, or to make extract from desiccated coconut meat?
I would add some vanilla bean paste to this & maybe some pista and cardmom powder.
