They had to get back home because Josh's wife was in her last few weeks of pregnancy with their first child. They won't be traveling here for a while as a result of her arrival.
Mr. H and Friends bought a Franklin smoker from Texas and have done some serious research about US food and BBQ and have been cooking up a storm. You should check them out.

Hi guys, there isn’t cowboys in NC. Cookout is headquartered in NC. Coleslaw is on top of the pork. By the way, I live in Raleigh where Sam’s Jones BBQ is located.

I believe that's coleslaw on top of the meat in the sandwich. That's normal for southern bbq sandwiches. Btw Cheerwine is a soda created (and mainly sold) in the Carolinas (North and South).

Vinegar and vinegary foods help cut through some of the fat in BBQ and soul food.

I agree that exporting BBQ would be very difficult since it is highly dependent upon specific ingredients, including the wood used to smoke it. Everyone has their preferences for the wood because it imparts different flavors, and, of course, the way the animals are raised also impart a different flavor and texture. You could probably get close to the same flavors in other countries, but you would never exact it.

This last week on the Beesleys, James' mum made pot roast. She commented several times that the butcher knew what meat she needed. Not a meat most Brits want.

My mother is from Alabama. She alway made collard greens with vinegar. I hated it. She loves it. I'm guessing it's one of those things you grow up with and also have to like green vegatables too.

Nah it won't make chicken dry. Chicken will dry out if you cook it higher heat quickly. When you cook it slow for a long time it retains the moistness. You're not on super high heat and the smoke is just penetrating the meat. Phenomenal.

  • @dppage

We couldn’t bring a smoker and over there and get the same results, especially with beef. We would have to bring the animals and wood as well.

Yes, banana pudding is a southern thing, but so damn good, everyone does it now! The Carolinas are East Coast, not really Cowboys. ALL THE ACCENT, NONE OF THE SADDLE TIME...put it that way. Doesn't diminish their "southern-ness" at all, but not the "working cowboy" sector of the country. That doesn't start till you get to Texas, Oklahoma, Kansas, Wyoming, Dakotas, etc...

There really aren´t many things better then a spicy BBQ pulled pork, topped with sweet coleslaw and on a brioche bun. I make them for my family and always have to make WAY more then needed as they all want to take the fixin´s home for the next day.

  • @lavenderoh

Cowboys are western, not southern. Beef is a western/southwestern thing, the south is all about pork. Texas is the southwest, North Carolina is the south. Pulled pork is hand pulled, traditional NC barbecue is chopped not pulled.

Remember that it can take 12 plus hours to cook BBQ, so during busy tourist season some will run out. These places are known all over the world due to the internet. So, yes some will run out. At least you know you won't be getting leftovers.
