    'Not your typical Michelin Star restaurant' is how De Kas was described to me by another head chef. Generous, open, natural are words that come to mind while dining there. The restaurant itself is stunning and catches you off guard: Massive green-houses, build in the 1920's, and re-built around the turn of the century, house this very special restaurant.
    In 2018 De Kas was taken over by Jos Timmer and Wim de Beer, who further elevated the cause and cuisine, earning them both a Michelin star and a Green star for sustainability. Jos is a no-nonsense chef who has worked at a string of plant-based restaurants and we had the pleasure of interviewing him for this episode.
    His fresh approach to sustainability has changed the way I personally see produce. Recently at the supermarket I refused to buy apples because they were imported from South Africa, and the same with many fresh herbs and potatoes (From Israel?). The UK like many countries is a treasure chest of seasonal vegetables and there is no excuse to buy anything other. I'm with you Jos.

    Setting up the restaurant inside a greenhouse is so cool! I love how the menu is decided based on the produce available. Keeps things so fresh and innovative!

    Really great concept. Been to a couple of places like this in Japan. People have lost a lot not living by the seasons. Globalisation is great but society is really paying the price for it.

    What a beautiful restaurant! I love the concept of a laid back Michelin starred restaurant surrounded by the food you’re eating. Will have to go, looks amazing! Another great video, loving this series
