Respectful Old School Tip: Put down a thick layer of newspapers and cover with a single layer of paper towels for draining potatoes. Saves lots of time from having to blot Potatoes. i got a home version from amazo a fry cutter works good -had it for five years!! 30 bucks-just be smart with it an it will last! meaning dont force it dont try cut potato that dont fit

To blanch the potatoes in water is the English/French way. It has changed over the years, but if you blanch in oil, use lard, as the fries are easier to handle after freezing, as they stay more firm when thawed out !

We enjoy them baked but that's the only way I make them so I really couldn't compare techniques for you.. They're really yummy though! :) Sorry I couldn't be of more help..

the little bits would make mash, either put in bag freeze as or mash then freeze you can freeze mash, in the UK we can buy it frozen. how about some unpeeled potato wedges, or peal cut into wedges then freeze for roast potatoes, but try with them in a bag just store as is main crop stories well. New or early potatoes not so well, but the main crop yes, buy them as you have may be the cheapest way of getting them, as there are so much more expensive veggies and flower you can grow in your garden some in greenhouses all year around. main crop potatoes grow very well commercial and at the right place, they are cheap.

I spend half my time chasing it on the counter. I need 4 hands. I dice green peppers and onion and stir them in the cuttings for Potatoes O'Brien in the morning.

It was convenient for me. You can bag the potatoes as soon as they harden. The purpose is to keep them from sticking together in the freezer. ;) Hope that helps!

I got the general idea, but most of us do not have a freezer big enough. Your Dad is cool, he can fabricate just about anything I suppose.

These were Russet potatoes. I love the stand my dad made for it. No sliding! ;)

Aye i see. I tried this but didn't blanch them. Mine turned black and when I defrosted them they were a disgusting bag of mush.
That will happen anytime you don't partially cook potatoes before freezing. Blanching really pays off! :)

Nah this is done constantly on the farm. Simply bleach and clean your sink like you would anything else.

We've kept them for about 5-6 months before.. We ran out by then though so they may be fine for longer.. I'm not sure past that. ;)
