I’ve actually passed through and bought the conch there it’s not bad but personally I prefer when it’s roasted in the foil over the fire rather than the water steam bath thing

In St Elizabeth, steaming food on zinc is not unusual. In Lacovia, stuffed parrot fish is prepared in that manner. When done, you peel the skin off like a banana (scales on skin) Smoked marlin is also a thing in St.Elizabeth.

If you have any health issues where you have to watch your cholesterol intake. You have to eat these sea foods in moderation. If you don't have a cholesterol problem. Eat/enjoy your shell 🐚 fish. It is a myth about eating shrimp 🍤 or shell 🐚 fish raised/caused cholesterol/LDL problem. As a matter of fact. Shrimp has a lot of health benefits.
Remember Westmoreland has a high Indian population so alot of words and cooking style will be different from other places,Plus every parish a bit different..I remember the first time I went to Manchester,I couldn't get over them calling meat 'salt thing ' or saying ' it for ' eat😂😂

Why put powder seasoning after putting all those nice natural and fresh ingredients? 🤔 I am not talking about the curry powder or the masalla. Some of these powder seasonings are high in sodium, MSG and artificial flavors. BTW. Masalla goes nice with curry 🍛 👌. Nice flavor 😋 blend.

Chunkay is the word we use in Trinidad when we burning seasoning in the oil . We also but green mango in our curry fish.
