I have to say Pete, Potato Salad is one of my favorites, and as you said, one can
add or subtract other ingredients to personal taste. Or in my case, "raised with".
My recipe was passed down from my 1st generation Dutch Grandmother and German
Grandfather, to my Dad and now to me and my kids. Similar to yours but does have
eggs, both baby dills and sweet gherkins, minced red onion, and chopped Spanish
pimento stuffed olives. Mix the whole works with dressing and mustard
and a liberal sprinkling of smoked paprika to dress it up and add a bit of a smoky taste.
Eye appeal, color and crunch, and loads of different flavors that work well together.
It's what I've eaten for 69 years. Never get tired of it.
Just the same, no mater how one likes it, so simple and too oft forgotten about,
especially as a tasty side to any Summertime cook. 😋😋😋
Your video came at just the right time as I need to whip up another large bowl of it
as we just finished up what we had in the fridge last night.

Kartoffelsalat recipes variy widely depending on which region of Germany you are in. My recipe is closer to the NW German recipe because my stepmother came from Hamburg. She always told me that the art of making a good kartoffelsalat was in knowing where to stop. They are a little more austere in the NW! I sometimes add a splash of cider vinegar, a sprinkle of dill and/or a few chopped chives, but never proteins like ham, bacon or eggs. Your recipe does sound good though 😋

My stepmother came from Hamburg where the recipe for kartoffelsalat is much less complex. The recipe varies from region to region, family to family, but the recipes from the northern regions tend to keep it more simple. My stepmother told me that the art of making a good kartoffelsalat was in knowing where to stop. They are a little more austere in the north 😊 I sometimes add a splash of cider vinegar, a sprinkle of dill and/or a few chopped chives. Your recipe sounds wonderful 😋

So many different styles on this basic recipe (of potato in mayo) I will certainly make this. I do like a sprinkle of cider/wine vinegar, red onion sliced on a mandolin and chopped chives.
    Thank you for the video.

Yes I agree, but I do draw the line at bacon bits and boiled eggs. My German stepmother told me that the art of making a good kartoffelsalat was in knowing where to stop. I sometimes add a splash of cider vinegar, a sprinkle of dill and/or a few chopped chives, but never proteins like ham, bacon or eggs. Sometimes less is more.

It's so good Andrea! I have seen so many versions with so many ingredients like boiled eggs and even bacon bits. I personally think less is more.

This is my go to recipe for potato salad J&R, although I sometimes use dill, chives and wholegrain mustard just to switch things up. I occasionally saw speck and ham used during my travels in Germany, but I never saw boiled eggs used like I have seen in many American potato salad recipes. Maybe it came from Eastern or Southern German regions. We Brits were confined to North West Germany for the most part.
