Thanksgiving day is around the corner. We hope you find lots of graceful and thankful things in your life.
Today, we present “Coq au Vin”, it is a French dish of braised chicken with wine, bacon, mushrooms, carrots, and onions.
The French used to eat this dish around Christmas time or family gathering events to celebrate together.
It is so tender and delicious. We love this dish as well. It is also a great substitution for Thanksgiving Turkey.

와인에 푹 빠진 닭~
오늘은 프랑스 가정식인 "꼬꼬뱅"을 준비했어요. 꼬꼬뱅은 구운 치킨과 야채들을 와인에 넣고 푹 끓이는 따뜻하고 건강한 요리에요
꼬꼬뱅의 유래는 여러가지 설이 있는데요, 그중 하나가 프랑스국왕 헨리4세때 프랑스는 영국과의 오랜 전쟁으로 힘든 시간을 겪었대요. 그래서 헨리4세는 일요일 만큼은 국민들에게 닭고기를 충족하게 먹게 하겠다..라고 다짐했고 그 이후로 농업 축산업이 발달 하기 시작하면서, 덕분에 일요일마다 모든 가족들은 닭고기를 먹는 전통이 자리잡게 됐대요!
비싸지 않은 와인으로도 충분히 맛있는 꼬꼬뱅을 만들수 있어요.

🎈Coq au Vin
Ingredients
6 pieces chicken(4 drumsticks / 2 thighs)
4 slices bacon (diced)
1 onion (diced)
1/2 lb of Mushrooms
4 carrots
6 cloves garlic (minced)
20 pearl onions
2 cups of wine
2 cups of chicken broth (low sodium)
1 Tbsp of tomato paste
2 Tbsp of flour
2 Tbsp of butter
2 fresh thyme springs
2 bay leaves
parsley
salt & pepper
[How to make]
1. Dice onion
2. Peel pearl onion. Blanching it once in boiling water makes it easier to peel.
3. Peeled carrots cut into 1.5 inches.
Thickly slice mushrooms.
Dice bacon.
4. Pat chicken pieces with paper towel and season with salt and papper.
5. Heat the pot over medium-high heat and cook bacon until crispy.
6. Remove it from the pan, leaving all that nice grease and fond behind. Sear for about 5 minutes each side until skin is crispy and golden.
7. Saute onions in the same pan over medium heat until lightly browned. Add minced garlic, tomato paste, chicken broth and red wine,
bay leaves, thyme springs.
Once it starts to boil, add chicken and bacon. Remove the bubbles.
8. Cover the lid and cook over medium heat for about 25-30 minutes. Turn the chicken once.
9. Add pearl onions, carrots. Cover lid and cook for 5 minutes. Add cremini mushrooms. Mash butter with flour together and stir into the pot. Boil for 3-4 minutes until sauce has thickened. Sprinkle parsley.
