We'll be the first to admit it-the breading is the best part of baked or fried chicken (or steak, or fish, or anything, really). So when the breading separates from the cooked chicken and falls off, it's a major bummer.
Remove the chicken from its packaging and pat the surface dry on both sides with paper towels. You can also let the chicken sit, uncovered, in the refrigerator to dry it out. It sounds counterintuitive, but a dry surface will help the flour adhere evenly to the chicken.
Ingredients:
Brining:
1 kg chicken
1 tbsp salt+ 1 tbsp vinegar
For Masala:
11/2 tsp salt
2 tsp chili powder
1 tsp black pepper powder
1 tsp white pepper powder
2 tsp garlic powder
2 tsp ginger powder
2 tsp onion powder
1 tsp vinegar
1 chicken cube
Dry Coating:
2 cup all purpose flour
1/4 cup corn flour
1/4 cup rice flour
1 tsp salt
1 tsp chili powder
1 tsp black pepper powder
1 tsp garlic powder
1 tsp onion powder
1 tsp Baking powder
Liquid Coating:
1/2 cup corn flour
1/4 tsp salt
1/4 tsp chili powder
1/4 tsp Bakin powder
1 cup cold water
Tasty Dip:
5 tbso curd
2 tbsp mayonnaise
2 pinch salt
1/4 tsp garlic powder
1)2 tsp lemon juice
1/4 tsp pepper powder
