Submarines have Ballest tanks that fill with water making them heavier, the crew control how much water goes into these tanks... Resulting in the boat sinking. Its why the captain would order them to flood tanks when diving. A U boat could reach depths of 700ft, so if the depth below keel was 400ft for example, they could bottom the boat gently and the Hull would hold... If the depth was around 700ft, they would have risked crush depth and explode under the pressure. 700ft was a good depth to avoid the depth charges as they would simply explode above the boat, never reaching them so from this depth, they'd just escape in silent running or remain still until the escorts left. This also depended on if the Hull hadn't already taken damage, if it had then the hulls strength would obviously be weakened and at those depths would be extremely suicidal to attempt to reach. To rise again, they would blow Ballest tanks which resulted in high pressure of air being blown into the tanks, forcing the water out of the tanks making the boat lighter and causing it to rise. The uboat at the end was under attack and they couldn't dive quick enough, they were caught in a depth charge barrage, they could only reverse and the boat couldn't be held (sinking too fast and the water was too deep) So they went full throttle in reverse and blew Ballest tanks, causing them to break the surface from the stern at speed as the boat was suddenly made lighter. Off the American coast during Operation Drumbeat, Uboats would bottom their boats during the day, surface at night, recharge batteries and refill their Co2 then hunt, afterwards they would travel to waters where they could dive, bottom the boat and lay in wait, repeating the same tactic over again.
