You can also cook the cauliflower rice in a dry nonstick pan. This both cooks it and dries it out.

I buy frozen riced cauliflower and cook it on medium heat in my cast iron skillet for about 8-10 minutes to dry it out. I don't brown it in the skillet. The skillet is dry without oil! Then I only use one egg, two cups cauliflower, and two cups of parmesan, bake until brown ... My crust never falls apart.

Oops, posting on my son's account....but why not just run the cauliflower through a juicer. all the juice is removed (you could drink it by adding it to other juices) and then you have the cauliflower already riced and drained. No need to cook in water, thereby losing nutrients into the water. Ive done it and it works. I also use one egg per c of cauliflower and have done it with and without cheese. Ive even added almond flour or coconut flour. Thanks for sharing!

If you don't want to cook the cauliflower first, and still have a great pizza crust, check out this recipe.
2 cups riced or shredded cauliflower
    2 cups shredded mozzarella
    2 eggs
    italian seasoning
Mix it all together, put in medium round pizza pan on parcment paper, spread to edges. Bake at 425 for 15 - 20 minutes. Take out of oven, top with whatever you want, put back in oven at 425 for 10-15 minutes. Thats it. No squeezing needed. :)

This is similar to my favorite cauliflower pizza recipe, but I use a combo of parmesan and low fat organic mozzarella instead of the goat cheese. We bake ours on a sheet of parchment right on top of a pizza stone, and the crust comes out beautifully crisp on the edges and can be held like traditional pizza. Such a great recipe to have in the arsenal, loaded with nutrition and definitely satisfies that pizza craving when you are avoiding traditional pizza.

i really do enjoy your presentations ... just one question!
Why do Americans call Italian condiments & toppings such as sugo (italian sauce) 'Marinara' or Gravy' .... Marinara is an olive oil and garlic dish containing seafood, there's not a dash of tomato in a Marinara sauce ... Pescatora is the tomato based version of a marinara and it also contains seafood!
A tomato based Sugo, such as the one put on the cauliflower pizza, if it does not contain garlic or basil is simply 'Passata' .... The basic tomato, garlic and basil (cooked) sugo is called 'Napoli'!
In any case, love your recipes 💛

I HAVE to find a vegan way to do this! Great idea.

+Luísa Moon use ground flax seeds in a small amount of water to replace the eggs and instead of cheese use ground cashews or almonds ^_^

Tahini works both as a binder and to impart a light cheesy taste. And its basically ground sesame so its vegan.

      +Disko H she's talking a tablespoon of flaxseeds. And they're like $10/pound.

+Nicha yes I was saying flax seeds are cheap as hell. In reply to the comment that said, "that's going to get expensive"

I sauté the cauliflower in a dry pan until the water is cooked out. A lot easier and less mess than cooking in water and having to ring out the water.

Wow...just made it and you are spot on.
Gonna make extra and freeze it
I bet it would make a great substitute for bread

Hi Dani. Could you please mass produce these crusts and sell them in my freezer section? ;-). Honestly, though, this looks fantastic and I'll be trying it soon. Would there be a good substitute for goat cheese? Cream cheese, perhaps? I can't eat goat cheese. Thanks.

She mentioned in a reply to another comment that cream cheese will work.

Hi Dani. I love your recipes. Sometimes bit difficult to realize all here in Germany. The European ovens become not so hot such as yours. But I'll do my best.
The thin cauliflower crust is like the italian pizza. I love that way of pizza. Greetings from Europe
